Chili in a Jiffy
A lot of chili aficionados will turn their nose up at what I'm proposing, but to hell with them, you have hungry mouths to feed!
Admittedly, the longer it simmers the longer the flavors have time to mature and come together, but for now time is of the essence so let's go.
1 lb ground beef Now you could use ground turkey, chicken or pork as well, but for pure flavor, beef wins every time on this one.
1 tin of kidney beans
1 tin of condensed tomato soup
1 tin of baked beans
1 tin of black beans (Optional)
1 large onion diced
3 tablespoons of oil
1 tin of corn (Optional)
3 tablespoons of chili powder
1 teaspoon chopped garlic
1 tablespoon of Worcestershire sauce I know that's a mouth full, even harder to spell believe me, but its a great ingredient to have on hand for so many dishes. If you don't have it, don't sweat it. You can get it next time.
A few shots of hot sauce, I'll leave that to yourself and family
Salt and pepper to taste
I know that sounds like a lot, but it really isn't. You are just going to give your wrists a workout with the can opener.
In large frying pan add oil and onions, cook until translucent. In other words you are sweating the onions. Add meat and cook till browned. Drain off any excess fat, then add garlic. Cook for a minute longer and add all the beans, corn, soup and spices.
Add extra water to cover if needed and bring to boil. Turn down stove to simmer and in 20 minutes it is done. As I said before the longer you leave this the better it will taste, but it will certainly be fine after the 20 minute mark.
My recommendation is to serve it with rice, it bulks up meal for only pennies and will cook in same time as chili.
One of the easiest dishes to prepare. I use basmati rice because it is bulletproof in preparation and one of the tastiest as well.
Pour 2 cups of rice into pot add dash of oil and salt, swish around till rice is shiny. Add in 3 and 3/4 cups of water, place on stove bring to boil. After it boils turn off element and place lid on pot. Leave for 20 minutes and you will have perfect rice.
Put a scoop of rice in a bowl cover with chili, serve with buttered toast or garlic bread and you have a meal for 4 in under 30 minutes.
Also you can add some tortillas chips and sprinkle with shredded cheddar if you want to get real fancy.
