3 Easy And Tasty Homemade Soup Recipes

By Edited Jul 28, 2015 0 2

These three soup recipes are some of my favorite to make. Soup is fantastic for filling you up quickly. In addition to this, because you can pack so many great vegetables into them, they can boost your immune system and encourage children to eat more vegetables too. It really is very easy to make your own tasty recipes at home, so do give it a try even if you are not a very experienced cook.

Certain vegetables are only seasonal, but the ones included in these recipes should be readily available to you throughout the year, meaning you can make these delicious dishes at any time. They are all relatively simple and hassle-free recipes for beginners in the kitchen but you can experiment adding other ingredients to them if you like. For example in the lentil recipe, adding potatoes could go down a treat or in the tomato recipe you could even try adding chili for a delicious kick. All the recipes will serve two people so if you have more guests to cook for then simply modify the quantities of the ingredients accordingly.

Lentil Soup

1. Delicious Lentil Soup

This is a really warming and delicious soup, surprising and spicy at the same time. It is not only a winter warmer but tastes great at any time of the year. Give this easy recipe a go and you will see just how simple it can be to make your own homemade soup.

  • 150g red lentils
  • 2 carrots, peeled and grated
  • 1 large onion, diced
  • 2 tablespoons curry paste
  • 100ml vegetable stock
  • 1 teaspoon of cooking oil (vegetable or olive oil are suitable)

Step 1

In a large and high sided saucepan, fry the onion pieces in the cooking oil until they are a soft golden brown color and then add the curry paste and stir together. We are only just getting started but already you can smell the delicious fragrance of this soup! Add in the carrots and lentils and then pour in your stock. Let the mixture simmer for approximately twenty minutes until the carrots and lentils are soft.

Remove from the heat and if you have a hand blender then use this to combine the ingredients. Otherwise, pour the soup mixture into a food processor to incorporate everything together fully. Return the blended soup back to the saucepan to reheat and to season with salt and pepper to taste.

Try adding bacon or chili powder for a real change and flavor kick to this soup, one teaspoon of chili powder will be enough to provide a strong flavor. Serve with a fresh and warm crusty baguette with butter.

2. Classic Carrot and Coriander

Healthy and packed with vitamin A, carrots are an excellent addition to any soup recipe. Coriander adds flavor and more intensity to the taste of the soup. I really enjoy making this easy recipe in the summer months but with carrots available all year around, you could even try it out today.

  • 450g carrots, peeled and grated
  • 1 large onion, diced (or 1 teaspoon of onion powder)
  • 1 teaspoon of fresh coriander (or ground coriander)
  • 100ml vegetable stock
  • 1 teaspoon of cooking oil (vegetable or olive oil are suitable)

 Step 1

In a large and high sided saucepan, fry the onion pieces in the cooking oil until they are golden brown in color. Now add the grated carrots, coriander and vegetable stock. Let the mixture simmer for a good twenty minutes until the carrots are softened nicely. Remove from the heat and use your hand blender to thoroughly combine the ingredients together.

Alternatively, use a food processor for a few seconds to give a very smooth texture. Return to the pan and season with salt and pepper to taste. You may also wish to add more coriander for a more intense flavor at this point. Serve with freshly baked baguette and butter on the side which will melt in the mouth with this soup.

3. Creamy Tomato and Pesto

This is probably up there in my favorite soups of all time! Tomato soup can be simply delicious and smooth, rich and creamy as well as full of flavor all at the same time. You will be making this one in batches once you have tried it out and as in the above recipes, you are simply cooking and blending ingredients, so there is no excuse not to try out making your own soup at home today!

  • 800g fresh tomatoes (or two tins of chopped tomatoes)
  • 1 teaspoon of caster sugar
  • 2 cloves of garlic (or 1 teaspoon of garlic powder)
  • 150ml single cream
  • 100ml vegetable stock
  • 125g basil pesto pot
  • 1 teaspoon of cooking oil (vegetable or olive oil are suitable)

Step 1

As in the above recipes, use a large and high sided saucepan. Fry the onions in the cooking oil and allow them to turn a soft, golden brown color. Then add the tomatoes, garlic, vegetable stock, cream and caster sugar to the mix. Allow the soup to simmer for around twelve to fifteen minutes, eventually reaching a rolling boil and stir at intervals. The sugar will help to bring out the sweetness in the soup from the tomatoes.

Remove from the heat and blend with either a hand blender or a food processor. Once the mixture is reheated in the saucepan and poured into bowls for serving, then spoon in the fresh basil pesto mix and swirl into the soup to create a lovely and tasty pattern. Serve with fresh, warm black olive bread or cheese and onion bread for a delicious combination of flavors.

I hope these recipes show you just how easy and simple it can be to make your own homemade soup. There are countless combinations of vegetables you could come up with on your own so experiment and enjoy healthy and delicious homemade soups today.

Hi JillianFae, thank you for your comment. I'm really glad you like the tomato recipe! I think that soup is underrated these days. But it can be so delicious as well as healthy to try out making it yourself at home, not to mention it's cheaper too.
