To make cheesy broiled flounder, preheat a broiler and place a few flounder fillets in a greased baking dish. To enhance the flavor of the flounder, sprinkle 2 tablespoons of lemon juice over the fish. Stick the flounder in the broiler and broil it until the fish flakes with a fork, which is typically four to six minutes. While you are waiting, take a small bowl and combine a 1/2 cup of your favorite cheese, a 1/4 cup of softened butter, 3 tablespoons of mayo, a 1/4 teaspoon of salt, a 1/8 teaspoon of hot pepper sauce and 3 chopped onions. Mix that all together and spread it onto your flounder once it has come out of the broiler. To melt your cheese, stick the flounder back into the broiler for 30 seconds or so and enjoy.
