After work all day, kids activities or staying home with kids all day, getting dinner ready is a challenge in most households.  If you have some chicken in your fridge, you are in luck. I have Six great, simple chicken recipes to cook for your family tonight. 


Chicken tacos
¼ cup salsa

¼ cup sour cream

1 packet taco seasoning

Shredded cheese

Shredded Lettuce

Diced tomato

6-8 chicken breast tenderloins

1 package of tortilla wraps
Combine salsa, sour cream, and taco seasoning in a bowl and set aside.  Cut tenderloins and fry in a pan.  Mix salsa mixture and chicken.  Place in tortilla, top with cheese, lettuce and tomato.


French Fried Onion chicken
I have tried this recipe with whole chicken breast and tenderloins. I found the tenderloins to be better because they are easier to coat and take less time to cook.


8-10 Chicken breast tenderloins

1 egg

1 container of French’s French Fried onions crushed 


Dip tenderloins in eggs and then place in large casserole dish.  Evenly cover all  tenderloins with French Fried onions. Bake in oven at 350 for 35-40 minutes.


Cheesy Potato Chicken
1 container condensed cream of potato soup

½ cup shredded cheese

4-6 chicken breasts


Place  breasts in casserole dish.  Coat breasts with cream of potato soup. Sprinkle cheese on top. Bake in oven at 400 for 1 hour.


Chicken Mac and Cheese

1 box macaroni shells

1 Jar Ragu Cheese Sauce

6-8 chicken breasts tenderloins


Cook macaroni in 6 cups water. Drain and set aside.  Cut tenderloins and fry in pan on stove.  Mix chicken, macaroni and sauce together.

Penne Ranch Chicken

4 chicken breast tenderloins

1 cup ranch sauce

1 box penne

1 diced green pepper


Cut  tenderloins and fry in pan.  Cook penne in 6 cups water and drain.  Combine tenderloins and Penne.  Mix green pepper into ranch sauce and pour over chicken and pasta

Cream of Chicken Chicken

This is a fabulous crock pot recipe. You can use either chicken or pork chops for this recipe. 

4-6 chicken breasts

1 cup flour

2 teaspoons dry mustard

1 can cream of chicken soup

2 tablespoons cooking oil


Mix flour and dry mustard.  Coat  breast in flour mustard.  Put oil until frying pan and fry breasts until golden brown (doesn’t have to be fully cooked).  Place breasts in crock pot and pour soup over it. Add 1-2 cups of water and set on high for 6-8 hours


Please note:  All recipes can use either chicken breasts or  tenderloins. I prefer tenderloins because they are easier to cut, cook and coat.
