Easy From Scratch 7Up Cake Recipe
7 Up pound cake is a recipe that everyone should have in their recipe box or recipe file. It is a delicious dessert, and it is so easy to make. This easy from scratch 7Up cake is perfect to serve when entertaining, or it’s a perfect dessert for carrying to covered dish dinners, neighborhood parties, family reunions, bake sales for school or to the new neighbors who moved in across the street. Whatever the occasion, this recipe for 7 Up pound cake will fill the bill.
Gather the ingredients to make a 7 Up pound cake:
3 sticks of butter or margarine, softened
3 cups granulated sugar
2 tablespoons lemon extract
3 cups all-purpose flour
¾ cup 7 Up
Before you begin, take the butter or margarine out of the refrigerator for it to soften.
When soft, place the butter or margarine in a large mixing bowl, and using a stand mixer, cream the softened butter or margarine.

To the creamed butter, add the sugar one cup at a time, and beat with the mixer until light and fluffy.
Add the eggs to the butter and sugar mixture one at a time beating thoroughly after each one is added.
Stir into the butter, sugar and egg batter one cup of flour, the lemon extract and about one third of the 7 Up. Mix these ingredients together until well blended. Repeat as follows; add one cup of flour and half of the remaining 7 Up. Mix until well blended. Finally, add the last cup of flour, the remainder of the 7 Up and mix until well blended.
(Note: Do not open the 7 Up until you are ready to add it to the batter since you do not want it to go flat.)
Pour the batter into a well-greased and floured 10-inch tube pan or a 10-inch bundt pan.

Bake it in a preheated 325-degree oven for one hour and fifteen minutes. Test for doneness.
Allow the cake to cool approximately 15 minutes before taking it out of the pan.
NOTE: “The easiest way to remove a cake from a tube pan is to place a plate on top of the pan, and holding the two together, turn them upside down. All you need to do, then, is to place your serving plate on the bottom of the cake, and once again, flip them over together. If you are using a bundt pan, then simply place your serving plate on top of the bundt pan, and turn them over together.”
Cool thoroughly before serving.
Another Great Use for This 7Up Pound Cake Recipe
If you need a specially decorated dessert for a birthday party, bridal shower, baby shower, etc., don’t order it; instead, use this recipe, and make your own.
Follow the directions above, but instead of baking it in a tube pan or a bundt pan, bake it in a well-greased and floured 9 x 13 x 2 inch baking pan. Bake it in a preheated 325-degree oven for approximately 55 minutes. Test for doneness.
Allow the cake to cool approximately 15 minutes. Place the serving plate you will be serving it from on top of the pan, and turn the two over together; then, remove the baking pan. (Since I don’t have a serving dish that is large enough to accommodate this dessert, I cover the bottom of a jellyroll pan with heavy duty Reynolds Wrap and use that.) Once it has thoroughly cooled, frost and decorate.
