Cooking Instructions

This recipe is based on the Bacon & Egg McMuffin from McDonalds.

Slice the muffin in half and toast it. Butter the two halves of the muffin.

Cut the panini open and butter it. This was done with a pre-flattened store bought panini, but if you have a panini press, you can use a proper one.

Cook the bacon. You can use a George Foreman grill, a George Foreman grilling pan (used here) or just shallow fry or grill the bacon normally.

If you don't have one, the panini can be shallow fried, oven cooked or, as was done here, cooked in a George Foreman grill. The Foreman grill is a reasonable substitute, as it cooks both sides at the same time, as well as compressing the panini. Cook until the brie starts to melt.

Roast chicken breast fillet

Slice the panini open and butter it. As with the Bacon and Brie Panini, this was also done with a store bought panini.
Bacon and Brie Panini PaniniCredit: eGDC LtdSlice the mozzarella into enough pieces to make a layer on the panini. Half a mozzarella ball should be enough.

Slice the chicken breast into enough pieces to also make one layer on the panini. About half a chicken breast fillet should be sufficient. This was done with a bought, roast chicken breast, but you can always roast from scratch.

Cook the bacon. This was done in a George Foreman grill pan.
