Apple pound cake is a great dessert for after dinner, to compliment afternoon tea or the perfect addition to a brunch. A blend fresh apples, spices and raisins, sweetened and place in a pound cake. Apple pound cake doesn't require any icing, so once it's finished baking, it's done. This recipe makes enough batter for a 10-inch tube pan and requires 1 hour and 15 minutes of baking time.

Apple Pound Cake

Apple Pound Cake Ingredients:

  • 1 1/2 cup of corn oil
  • 2 cups of granulated sugar
  • 3 eggs
  • 2 teaspoon of vanilla extract
  • 3 cups of all-purpose flour
  • 1/2 cup of golden raisins
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 2 cups of finely chopped, peeled, fresh apples
  • 1 cup of chopped nuts


  1. Combine the corn oil, granulated sugar, eggs and vanilla extract in a large mixing bowl. Beat until the mixture is well blended.
  2. Sift the dry ingredients together, then add them into the wet ingredients. Mix until blended well.
  3. Fold in the apples, raisins and chopped nuts. I usually prefer pecans, but in spice type cakes such as these, walnuts are a better choice. However, you can use whichever you prefer, or leave them out all together.
  4. Grease a 10-inch tube pan by mixing shortening and flour together and rub on the inside of the pan.
  5. Spoon the apple pound cake batter over into the tube pan. Use a spatula to rake all of the batter out of the mixing bowl.
  6. Bake at 325 degrees Fahrenheit, until done. This should be about 1 hour and 15 minutes. Test the cake after it has baked for about an hour with a long piece of uncooked. Insert it, if it comes out clean it is done, if it doesn't it needs to bake longer.
  7. Remove the pound cake from the oven, once it has finished baking.
  8. Allow it to cool for about 10 minutes on a wire rack, and then remove it from the pan.
  9. Serve immediately or later. Store it in an airtight container.


This pound cake can be baked in a bundt cake pan if desired. It can stand alone but taste great with a glaze drizzled over the top. To make a glaze:

Glaze Ingredients:

  • 1 cup of powdered sugar
  • 1/2 teaspoon of vanilla extract
  • 2 tablespoons of butter
  • Orange juice

Mix all of the ingredients together, with the exception of the orange juice. Once the ingredients are blended well, beat in orange juice until the glaze reaches the desire consistency. Drizzle over the cake while it's slightly warm.

Apple pound cake is perfect for fall baking and during the holidays. Fresh orchard apples are harvested in the fall. Select firm apples for baking. Soft apples are more suitable for eating, not baking. Consider type of apple for the desired taste, such as Golden Delicious and Honeycrisp for sweeter taste, Empire for slightly tart taste and the and Granny Smith a really tart fancy. The aroma of the fruit and spices baking in the fall, makes a house smell like a warm home.
