Although this is a beef in black bean sauce recipe, the sauce also works well with chicken or duck. This Chinese dish consists of a quick stir-fry accompanied by a richly flavored dark sauce. The broccoli, corn and water chestnuts add flavor, color and texture to the dish.

Ingredients (to serve 4):

8oz of lean fillet, or rump, steak
1 tbsp of sunflower oil
8oz of broccoli
4oz of baby corn (diagonally halved)
3-4 tbsp of water
2 leeks (diagonally sliced)
8oz can of water chestnuts (sliced)

For the marinade:

1 tbsp of fermented black beans
2 tbsp of dark soy sauce
2 tbsp of Chinese rice vinegar (or cider vinegar)
1 tbsp of sunflower oil
1 tsp of sugar
2 cloves of garlic (crushed)
1in of fresh root ginger (peeled and chopped finely)

Firstly, make the marinade and sauce base. Mash the fermented beans in a bowl (non-metallic). Add the rest of the ingredients. Stir well.

Slice the steak thinly, cutting across the grain with a sharp knife. Add the steak slices to the marinade. Stir the steak slices well in with the marinade to make sure they are well-coated. Cover up the bowl and put it to one side for several hours while the steak marinates.

Next, heat up the sunflower oil in a wok or large frying pan. Drain the marinated steak slices (keep the marinade). When the sunflower oil is hot, put the meat in the pan and stir-fry it for between 3 and 4 minutes. Then put it on a plate and leave it to one side.

Now, cut the broccoli up into small florets. Put the broccoli, baby corn and water in the pan. Bring it to the boil. Cover the pan and cook gently around 5 minutes, until the vegetables are tender.

Finally, put the leeks and water chestnuts with the broccoli mixture. Toss the ingredients over the heat for between 1 and 2 minutes. Now, put the steak back into the pan and pour the remaining marinade over the pan's contents. Toss the mixture briefly again over a high heat. The dish is now ready to serve with rice.


- Fermented black beans can be bought in Oriental stores. They are whole soya beans which are cooked, salted and fermented.
