Easy Kid Recipes - Chocolate Eclair Dessert

This is the first recipe in the Easy Kid Recipes Series – an awesome chocolate eclair dessert! Working with a parent, you will create a delectable dessert that the whole family will enjoy. The only thing hard about this chocolate eclair dessert recipe is waiting for it to chill!

Real chocolate eclairs are actually made using a baked pastry. When the pastry is cool, pudding is placed inside the pastry shell, and a chocolate frosting is spread on top. The recipe we are making today, will taste similar to the chocolate eclair pastries - but it will be easier to make.

1st Recipe in the Easy Kid Recipes Series

Let's gather the ingredients needed to make this yummy chocolate eclair dessert:

1 – package Jell-O Vanilla Flavor Instant Pudding, large size

3 – cups cold milk

1 – container Cool Whip, 8-ounce size, thawed in the refrigerator

1 – box graham crackers, 14.4-ounce size

1 – container chocolate frosting, 16-ounce size

Things you will need to make this recipe:

Large mixing bowl

Whisk

Electric hand mixer

Measuring cup

Large spoon

Spatula for scraping the bowl

Spatula for spreading the frosting

9-inch x 13-inch Pyrex glass dish

Microwave safe bowl, small

Let's Cook

Step 1: 

Open the graham crackers. Place a single layer of the graham crackers in the bottom of the 9-inch x 13-inch glass dish. Some may need to be broken to cover the bottom completely.

Step 2:

Empty the pudding mix into the large mixing bowl.

Step 3:

Next, measure 3 cups of milk, and pour them into the bowl. Use a whisk, or an electric hand mixer, to mix the pudding and the milk together.

Step 4:

Empty the entire contents of the Cool Whip container into the pudding mixture. Using the electric hand mixer, mix the Cool Whip into the pudding.

Step 5:

With a large spoon, dip half of the pudding from the bowl, and place it on the graham crackers in the dish. Leave the other half of the pudding in the bowl. With the back of the spoon, smooth the top of the pudding to make it flat.

Step 6:

Place a layer of the graham crackers on top of the pudding and Cool Whip mixture.

Step 7:

Dip the rest of the pudding mixture from the mixing bowl, and place it on the layer of graham crackers. Again, use the spoon back to smooth over the top of the pudding. Cover this layer of pudding with another layer of graham crackers.

Step 8:

Open the container of chocolate frosting, and spoon the frosting into a microwave safe bowl. Lightly cover the bowl with a saucer, place the frosting into the microwave, and heat it about 30 seconds, or until it is soft enough that it can be poured. Stir the frosting before pouring it over the top of the layer of graham crackers, and smooth over the top of the frosting with a spatula.

Step 9:

Once the frosting is cool, cover the dish, and place the chocolate eclair dessert into the refrigerator. Allow the dessert to cool completely (about 4 hours), or refrigerate it overnight.

 Now let’s clean up the kitchen! Put any leftover graham crackers back into the pantry. Place any containers that can be recycled into the recycle bin. Return the electric mixer to the cabinet where it belongs. Before placing the bowls and utensils into the dishwasher, you might want to make sure any pudding or frosting has been properly licked off - we wouldn’t want to waste any!
