Benefits of a Good Breakfast and a Few Rich Recipes

One of the most talked about phrases in the history of mankind is that breakfast is the most important meal of the day. But even after we've heard it so many times, we do not give importance or simply do not know how to make breakfast beneficial for ourselves.

Here, in this article, we've set out to offer breakfast options that are varied, rich, practical, and above all, breakfast recipes that you can prepare at your home without spending too much time or money.

Did you know that people who eat breakfast have a lower body mass index? This means they have a better chance of avoiding being overweight. So a good breakfast can help you stay fit and maintain a healthy weight. 

The breakfast improves mental performance. A good breakfast pumps energy to the brain after fasting all night. A good breakfast helps intensify concentration, memory and other mental abilities. In order to consume a healthy breakfast and to have access to all it's positive benefits, make sure it contains carbohydrate, protein and fat. Once you get used to eating breakfast, it is possible that your food and dining will be much healthier, because your needs will be more balanced. 

If you want to lose weight include egg in your breakfast. It includes proteins that can help with losing weight (obviously, if you're an over-weight). Remember that all diets should be designed by a nutritionist and can be dangerous if you go on a diet without a rhyme or reason. Moreover, since you'll be eating less, it again helps in reducing those extra pounds.

And, who doesn't want to start a fresh morning with a good mood? A healthy and good breakfast should help you in achieving this. Moreover, it is also an ideal time to share some moments with your family (this is one of our favorite reasons).

Well, we've discussed some of the benefits. Let's move onto some breakfast recipes.

Recipe 1: Scrambled eggs with nopales

• Servings: 4
• Preparation time: 5 minutes
• Cooking time: 10 min
• Ready in: 15 min

Well, it is an excellent choice for a healthy breakfast. The energy that the eggs give you will last for hours.

• 1 tablespoon spreadable cream 
• 1/2 cup finely chopped onion
• 1 small jalapeno pepper, seeded and finely chopped
• 1/4 cup of chopped nopales (cactus tender) 
• 4 egg whites
• 2 eggs
• 2 tablespoons skim milk
• 1 tablespoon chopped fresh cilantro
• 4 corn tortillas, hot 

Melt spreadable cream over medium heat in a 10 inch nonstick skillet. Cook onion and jalapeno, stirring occasionally for 5 minutes or until soft. Mix the cactus and cook while stirring occasionally for another 2 minutes. Meanwhile, whisk the egg whites, eggs, milk and pepper with whisk. Place the egg mixture into the pan and put it on simmer, stirring frequently until eggs are fully cooked. It should take about 2 minutes. Add chopped cilantro as the final touch and serve with warm tortillas.

Recipe 2: Eggs Benedict

• Servings: 2
• Prep Time: 25 min
• Cooking time: 5 minutes
• Ready in: 30 min 

This classic brunch dish was created many years ago and owes its name to Mr. and Mrs. Legrand Benedict, Delmonico's restaurant customers in New York, who complained about not seeing anything new on the menu. Now, get hold of your apron and try them on your table! 

• 3 English muffins 
• 3 tablespoons butter or margarine, softened or room temperature
• 1 teaspoon butter or margarine
• 6 thin slices Canadian style bacon or ham
• 6 eggs
• Paprika (add it only if you want to)
• Hollandaise Sauce (see below)
• 3 large egg yolks
• 1 tablespoon lemon juice
• 1/2 cup hard butter (do not use margarine) 

1. Prepare Hollandaise Sauce; Keep it warm.
2. Part the rolls in half; tuéstalos. Spread 3 tablespoons of the butter on the rolls and keep them warm.
3. In a 10-inch skillet, melt 1 tablespoon butter over medium heat. Cook ham in butter until lightly browned on both sides, keep it warm.
4. In a saucepan or skillet, heat 2 to 3 inches of water to a boil, reduce to a simmer. Empty eggs (one at a time) into a custard cup or mold. Holding the cup near the hot water, carefully slide the egg into the water. Cook for 3-5 minutes or until the whites and yolks are firm, not mushy. Remove with a spoon jig.
5. Place 1 slice of ham on each half of English muffin. Put the egg on top. With a spoon, add the warm Hollandaise sauce over the eggs. Sprinkle with paprika.

Hollandaise Sauce:
In a saucepan, one and half quarts, vigorously whisk egg yolks and lemon juice with a wire whisk. Add 1/4 cup of butter. Heat over low heat, stirring constantly with wire whisk, until butter is melted. Add another 1/4 cup of butter. Continue stirring vigorously until the butter melts and the sauce thickens. (Make sure butter melts slowly so that the eggs have time to cook and the sauce to thicken without curdling.) If the sauce curdles (the mixture starts to separate), add 1 tablespoon of boiling water and stir vigorously with a whisk or electric hand mixer until the mixture is smooth. Serve immediately.

Recipe 3: Drowned Eggs

• Servings: 2
• Prep Time: 15 min
• Cooking time: 10 min
• Ready in: 25 min

Enjoy this delicious recipe with a little cheese, avocado, parsley and tortillas. Accompanying this recipe with Cinnamon Muffins and Nuggets and Peach Mint Smoothie would enhance your breakfast experience even more.

• 2 lbs. (12) plum tomatoes, chopped
• 1/4 onion, chopped
• 2 cloves garlic, minced
• 1/4 cup chopped cilantro and more for decoration
• 1 tsp. chili powder
• 2 tbsp. canola oil
• 4 eggs
• salt to taste
• 4 corn tortillas
• 1 avocado, sliced
• 1/2 cup cheese, crumbled 

Combine the tomatoes, onion, garlic, coriander and chili powder in a blender. Season with salt and blend well. Now, heat 1 tbsp. oil in a medium pan over medium-high deep heat. Pour the sauce into the pot and stir carefully because the sauce will splatter. Lower the heat to low and cook 15 minutes, stirring occasionally.
Break the eggs into a small bowl and carefully add eggs to the sauce. Cover and simmer for 6-7 minutes for medium soft yolk or 10 minutes for a fully cooked yolk. Serve sauce over the eggs with warm tortillas and garnish with crumbled cheese and chopped cilantro.
