Corn Pudding - A Delicious Side Dish

Carrying on a Tradition

Today, I want to share with you a family recipe – Best Corn Pudding Recipe. This is my mother-in-law’s recipe, and she mainly cooked using ‘the pinch of this and a pinch of that’ style, but she was a magnificent person who took the time to measure her pinches, and write down directions so she could share them with me. I am grateful for having her as a mother-in-law and as a friend.

She enjoyed cooking and was very talented, so, needless to say, there was always plenty of delicious food for her family. While she fixed and served many different kinds of foods, there were certain times, Thanksgiving, Christmas, and other holidays, where you knew some dishes, like corn pudding, would always be present. So, when my husband and I took over serving these meals, we decided to continue with many of her traditions, some of my family’s traditions, and we added a few of our own.

If you have read, and made, some of my other recipes, then you know I like quick and easy dishes, but they must be tasty, too. This Best Corn Pudding Recipe fits the bill in every way; plus, it is a wonderful comfort food. Just taking a bite of the yummy, Southern corn pudding will put a smile on your face. And while I have talked about making and serving this side dish at Holiday meals, it is so simple to make that it can be enjoyed with any meal. So, let’s give it a try:

Another Great Comfort Food Recipe

Let's gather the ingredients needed to make this Best Corn Pudding Recipe:

½ stick of butter or margarine

1 can (14 ¾ ounce size) cream corn

1 large can evaporated milk

¾ cup granulated sugar

3 eggs

2 tablespoons corn starch

pinch of salt

Let's Cook

Cut the one-half stick of butter or margarine into approximately 1-tablespoon size chunks, and place them into a shallow, ovenproof dish (I use an 8 ¼ inch round Pyrex Baking Dish). Place the dish into the oven to melt the butter/margarine. After the butter has melted, remove the dish from the oven, and set it aside while you make the corn pudding.

Break the three eggs into a medium size bowl, and using a whisk, beat them to incorporate a little air. Add the pinch of salt.

Next, alternate between adding to the eggs, the granulated sugar, cornstarch, and the can of evaporated milk.

Lastly, stir in the can of cream corn.

Tilt the baking dish, with the melted butter, from side to side, in order to spread the melted butter up the sides of the dish.

Pour the cream corn mixture into the dish.

Bake in a preheated 350-degree oven for approximately 45 minutes, or until the center is almost set, but has a slight jiggle.

Serve as soon as it comes from the oven.

Hey, Ms. Front Page, when I was in Alabammy over the summer I discovered this stuff. I love bread pudding, but I HATE cornbread, but I like the corn pudding. So, thumb's up from me for making me hungry (again!)
