I love enjoying yummy snacks and drinks with family and friends. One snack I enjoy very much is chucky salsa with Tortilla Chips. I have researched and experienced with many different versions of chunky salsa recipes and I think I have mastered the perfect version.  There is a lot of cutting involved, however it is worth every bite!

- 10 roma tomatoes

- 1 bunch of cilantro

- 1 bunch of green (spring) onions

- 1 small red onion

- 6-8 cloves of garlic

- 1 can of corn, whole

- 1-2 Serrano chili peppers (depending on how spicy you want it)

- 2 limes

- Salt and pepper

- 1 bag of tortilla chips

Start by cleaning/rinsing the tomatoes, green (spring) onions, red onion and Serrano chili peppers.

Once the vegetables are cleaned and dried off, we can begin cutting. Start with the roma tomatoes. Cut all the tomatoes into tiny squares. Set it aside in a large serving bowl.

Chop up the green (spring) onions in tiny pieces. Add it to the diced up tomatoes.

Many say cilantro is an acquired taste. I absolutely love it; therefore I would usually load it on; however you can put in a quarter or half a bunch or even none. If you do add cilantro, chop it up into tiny pieces. Add it to the tomatoes and green onions.

Cut the red onion in half. Save half of it and mince the other half. Add the minced red onion to the tomatoes, green onions and cilantro.

Mince about 6-8 cloves of garlic. Add the minced garlic to the tomatoes, green onions, cilantro and red onion.

Open the can of corn and drain the liquid. Add the corn to the other ingredients in the bowl.

Mince the Serrano chili peppers and add it to the rest of the ingredients. I would recommend putting a bit at a time as it could get very spicy.  If you prefer, you can even leave it as the last ingredient to add to the salsa.

Add a pinch of salt and pepper (to taste) to the ingredients.

Cut up the limes and squeeze the lime juice into the salsa.

Once everything is in the bowl, mix all the ingredients together. Serve with tortilla chips. This should serve a party of 6-8. I hope you enjoy the salsa as much as we do.
