Who doesn't love blueberry muffins? This little spin on a blueberry muffin adds a little bit of bran to make it a bit healthier as well as another delicious twist: Peaches! The mix of blueberries and peaches adds an interesting flavour profile that will make getting your daily fruit and bran intake a heck of a lot easier.
-1 cup buttermilk
- 1/4 cup oat bran
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 1 egg, beaten
- 1/4 cup melted butter
- 1 cup blueberries, fresh blueberries
- 1/2 cup finely sliced peaches
Preheat oven to 400 °F.
Mix oats and buttermilk in a bowl.
In a seperate bowl mix backing powder salt, flour and brown sugar.
Add egg and melted butter to oat and milk mixture. Add this mixture to the dry ingredients and stir until moist.
Pour in blueberries and sliced peaches into the bowl and lighly stir
Fill 12 muffin cups 3/4 full.
Bake for 15-20 minutes
