Some people don’t like the sour flavor of a dill pickle, but prefer the sweet taste of a bread &butter-pickle. Bread and butter-pickles are a wonderful accompaniment to hamburgers, sandwiches and fit in perfectly to a grilled food menu. Many foods taste better homemade and bread & butter-pickles are no exception. Making your own pickles is typically a long process leaving you with jars and jars of pickles after a long and exhausting day of canning. Well, add the convenience of the microwave along with a great recipe and you no longer have to spend hours sweating over the stove, sterilizing jars and cutting up bushels of cucumbers just because you long for the taste of homemade bread and butter pickles.
Many bread &butter-pickle lovers take their pickles to the next level by chopping the slices into small cubes and turning them into relish. Fresh relish on a hot dog really adds a special flavor that can’t be matched by store bought relish. Adding chopped pickles to pasta salads and potato salads gives the salads a fresh new twist.

Microwave bread &butter-pickles Recipe
Slice cucumbers into rings and place them into a clean mason jar.
Cut a small white onion in half, slice it into thin strips and place the onion strips into the mason jar.
Add 1 teaspoon mustard seeds, ¼ teaspoon crushed red pepper flakes, ¼ teaspoon celery seed, 1 small stick of cinnamon, 2 whole allspice berries, 2 whole cloves, 1/8 teaspoon turmeric,1 pinch ground allspice and 1 pinch ground cloves into the jar with the cucumber and onion.
Pour 1 cup water, 1 ½ cups white vinegar and 1 ½ cups apple cider vinegar into a Pyrex measuring cup. Place the measuring cup into the microwave oven and cook for 4 to 4 ½ minutes. Microwave cooking times vary, keep an eye on the liquid and cook it in the microwave until it comes to a boil.
Put on a pair of oven mitts.
Remove the Pyrex measuring cup from the microwave and add 1 cup of sugar. Stir the mixture until the sugar is completely dissolved.
Pour the mixture into the jar with cucumbers, onions and spices until the liquid covers the cucumber slices. If you are short on liquid, add boiling water to the jar until the slices are covered with liquid.
Loosely drape a piece of microwave safe plastic wrap over the opening of the jar.
Place the jar into the microwave and cook the cucumber slices for 3 to 3 ½ minutes on the highest setting.
Put on the oven mitts and take the mason jar out of the microwave.
Keep the plastic wrap in place on top of the jar and immediately screw the lid on over the plastic wrap.
Allow your sweet bread and butter-pickles to cool to room temperature.
Place the jar of bread & butter-pickles into the refrigerator to chill for three to four hours or when they become cold.
This new twist on an old favorite will surely become a “go to” recipe in your kitchen.
