If you are anything like me, you love porridge (or oatmeal) almost as much as you love bacon and eggs for breakfast. But have you ever thought about combining the two?
OK, I know what you are thinking.
"Bacon and eggs are savoury and oatmeal is usually sweet. They should be kept separate."
But it doesn't have to be that way. You can have your oatmeal and eat it too!
I have found a way to meld the ingredients together into a creamy blend of breakfast awesomeness that will have you setting the alarm early and skipping to the kitchen. It is easy to cook in the microwave and is a healthy start to the day.
Here is the ingredients you will need:
- 2 rashers of chopped bacon
- 1-2 eggs
- ½ cup quick oats
- ½ chopped avocado
- 2 teaspoons natural honey
- Salt and pepper
- 1 cup Water
1. Spread the bacon between 2 pieces of paper towel.
Microwave on high for 1 minute.
2. Place the cooked bacon in a bowl, cover with the oats and add the water.
Microwave for another minute on high.
3. Stir in the avocado.
One more minute on high in the microwave then set aside.
4. Crack the egg(s) into a coffee mug, add a dash of milk, salt and pepper to taste and whisk.
One minute forty seconds on high until the omelette rises above the edge of the mug.
5. Serve the omelette on top of the porridge, then drizzle with honey.
I use an 1100 watt microwave. You may need to adjust the times slightly according to the power level of your microwave.
I enjoy this for breakfast 2 or 3 times per week. It is absolutely delicious.
The creamy texture of the oatmeal and avocado perfectly complements the balance between the sweetness of the honey and saltiness of the bacon. The dish also provides a real energy boost to start the day.
I must admit that when I first started making this my family thought I was a little bit crazy. "Don't knock it until you try it", as I always like to say.
