Candy Cane Brittle - Delicious
Here is a great way to use up all those candy canes that we have at Christmas time. I find you can only eat so many of those before they end up being tossed, or re-gifted! Which seems like such a waste, but there is this great easy recipe, Candy Cane Brittle. It only takes two ingredients, and you could also try some variations of your own, but I found this to be the best tasting.

If you are a candy cane lover, then you are going to think you have died and gone to heaven with this holiday treat! Watch out for them when they go on sale.
Here is what you need:
two pounds of good white chocolate (you can get this from bulk food stores and the bulk food section of your grocery store)
Thirty (30) peppermint candy canes (the red and white striped, not other colors)
(NOTE: if you want to make this any other time of the year, you can use the red and white swirl type peppermint candies)

Instructions:
This is great for stress! You are now going to smash those candy canes (make sure all the wrappings are off first) Do this by putting them in a zip lock bag and then smash them up with a meat mallet, or bash them on the counter, whatever gets them into broken pieces. The kids like to help with this part, just donât pulverize them! Bite sized little pieces.
Melt the white chocolate. You can do this in the microwave, just start slowly, like 1 - 2 minutes at a time, take out and stir and then do it again, you donât want to over cook the chocolate, be careful not to burn it. You can also use a double boiler on the stove and melt the white chocolate over hot water.
As soon as you have melted the chocolate and it is smooth, stir in your broken candy cane pieces, and mix well. Then spread the mixture evenly into a jellyroll pan.
NOTE: You can line the jellyroll pan for easy cleanup.
Chill until set, which should take approximately one hour or more. Break into pieces and store in a sealed container. Delicious!
There you have it, they are colorful treats, and are easy to make, and who doesnât like bashing something? They make a nice change and the flavor is great for dessert or after a big meal.
