This is a potato salad with a twist. It combines contrasting textures, pesto and red potatoes to make one of the best potato salads I have ever tasted. It is quick to make and is sure to be a crowd pleaser.
-1/2 cup mayonnaise
-1/2 cup plain yogurt
-1/4 cup low fat mayonnaise
-1/4 cup milk
-1/4 cup freshly grated Parmesan
-1/4 cup prepared pesto
Combine the above and set aside.
-3 pounds red potatoes, boiled, peeled and cubed
-1/2 cup sliced green onions
-1 chopped red bell pepper
-2 cups Havarti or Muenster cheese, cubed
Next combine your potatoes, green onions, pepper and cheeses.
Blend in dressing and keep chilled.
Should serve around 8
