3 – 4 cups leftover rotisserie chicken, leftover turkey, or cooked chicken breasts
1 package (5 ounce size) Stove Top stuffing mix for chicken or turkey
1 can cream of mushroom soup, undiluted
1 cup chicken broth
1/2 cup butter or margarine, melted
The quick and easy way to make this dish is to use leftover rotisserie chicken or leftover turkey. Chop the leftover meat into bite size pieces, and use the drippings in the bottom of the container or leftover broth from cooking the turkey. If you don't have either the rotisserie chicken or the leftover turkey, then boil three large or four small chicken breasts. Place the chicken on a plate to cool, strain the broth, and set aside. Chop up the cooked chicken breasts into bite size pieces.
Mix the mushroom soup and chicken broth together in a large measuring cup or medium size bowl.

Place the Stove Top stuffing in a bowl, and pour the melted butter over the stuffing. Mix well. Set aside ¼ cup of stuffing to sprinkle over the top of the casserole.
Grease an 8 x 8 inch casserole dish. If you plan to refrigerate this to cook later, be sure to use a Corningware casserole dish that will go from the refrigerator to the oven safely.
Place half of the stuffing/butter mixture in the bottom of the casserole dish. Next, layer half of the chopped chicken over the stuffing. Pour half of the mushroom soup and broth mixture over the chicken. Repeat the layers. Use the reserved ¼ cup of stuffing to sprinkle on top of the casserole.
Bake the uncovered casserole in a preheated 350-degree oven for 30 to 45 minutes.
