Chinese Vegetable Fried Rice Recipes

Chinese fried rice can be about a lot more than a simple serving bed for main dishes. The options for serving it as a vegetarian meal alone are many and varied. It can either be served as a bed for a vegetarian stir fry in a conventional sense, or the vegetables can be incorporated in the rice. All that is required is a little bit of imagination and experimentation to produce dishes which are likely to appeal to and be enjoyed by vegetarians and omnivores alike. This page is about providing some tips and varied ideas to help you come up with your own original creations.

Choosing Rice for Stir Frying

It is essential to use basmati or other long grained rice for frying

Fried rice is made from basmati or long grain rice. This is vitally important. Rice such as arborio rice designed for making risotto or rice pudding is not suitable.

How to Make Basic Fried Rice

Basic Chinese fried rice

Ingredients (Serves 1)

  • ½ cup basmati or long grain rice
  • Salt (optional)
  • Vegetable or sunflower oil for frying
  • Generous splash of light soy sauce

Rice is washed before it is cooked

Put the rice in to a sieve and wash it under running cold water. This is above all to remove the excess starch and any dust which may have accumulated by the grains rubbing together while in the packet. Bring a large pot of water to a boil. Salt is optional but remember that when the rice reaches the stage of being fried, soy sauce will be added, which is extremely salty. Add the rice to the boiling water. Bring the water back to a simmer, stir briefly but well and continue to simmer for ten minutes.

Drain the rice through a sieve. Put it on a large dinner plate and spread it out. Cover with a vented food cover and leave to cool completely for about half an hour.

Bring your wok up to a smoking hot heat. Add the oil and let it come up to heat. Add the rice and stir fry for about a minute.

Splash in some light soy sauce and stir fry for another thirty seconds. The basic fried rice is now ready to serve.

Simple vegetable stir fry served with fried rice

This first idea simply shows a way of serving fried rice with vegetables also cooked Chinese style.

Ingredients (Serves 1)

  • ½ cup cooked and cooled basmati rice
  • Vegetable oil for stir frying
  • ½ red bell pepper, seeded and sliced
  • ½ yellow bell pepper, seeded and sliced
  • 6 snowpeas (mangetout)
  • 6 ears baby corn
  • 1 small onion, peeled and quartered
  • 2 chestnut mushrooms, halved
  • Black pepper
  • Light soy sauce

Put a small, ovenproof dish in to your oven - at its lowest setting - to preheat.

Prepare the fried rice as described above and put it in to the heated dish. Return the dish to the warm oven.

Add some more oil to the wok and stir fry the onions for about thirty seconds before adding the peppers and corn for a further thirty seconds' frying. Add the snowpeas and mushrooms and stir fry for about another minute. Additional soy sauce is optional but the dish should be seasoned with black pepper and (unless using soy sauce) some salt.

Arrange the rice either on one side of a serving plate or as a bed on a plate before plating the stir fried vegetables with a large, slotted spoon.

Fried rice with assorted vegetables

Ingredients (Serves 1)

  • ½ cup basmati rice, cooked and cooled
  • ½ red bell pepper, seeded and sliced
  • ½ yellow bell pepper, seeded and sliced
  • Vegetable oil for stir frying
  • 8 ounce can bamboo shoots and water chestnuts, drained
  • 1 tablespoon unsalted cashew nuts
  • 1 large clove of garlic, peeled and finely chopped
  • Black pepper
  • Light soy sauce
  • Bottle of ice cold Tsingtao or other Chinese beer to serve (optional)

Heat your wok and add a couple of tablespoons of vegetable oil. Stir fry the bell pepper slices for half a minute before adding the remaining vegetables for a further thirty seconds. Season with black pepper.

Add the rice followed by a good splash of light soy sauce. Stir fry for one more minute and the dish is ready to serve with the Tsingtao beer.

Chinese Sweet and Sour Vegetable Fried Rice

Sweet and sour fried rice with mixed vegetables

Ingredients (Serves 2)

  • ¾ cup basmati rice, cooked and cooled
  • ½ green bell pepper, seeded and sliced
  • ½ white onion, peeled and sliced
  • 2 tablespoons vegetable oil for frying
  • 1 medium tomato, cut in to 8 segments
  • 1 ring of pineapple canned in own juice, cut in to 8 segments
  • 1 tablespoon frozen peas
  • 4 ounce packet sweet and sour stir fry sauce
  • Salt and black pepper

Add the frozen peas to a pot of boiling water. Simmer for three minutes and drain.

Heat up the wok and the oil. Add the onion and green bell pepper and stir fry for thirty seconds.

Add the rice to the wok and stir fry for a further minute. Add the sweet and sour sauce and stir until fully combined.

The peas, pineapple and tomato only require heating through. They should be added for a final thirty seconds' cooking before the dish is tasted, seasoned and served.
