The holidays are a wonderful time for sharing memories, family time, stories and all this is done best over a wonderful home cooked meal.

Most everyone loves cheesecake or Oreo cookies. This year, combine the two and make a doubly delightful dessert that everyone is sure to rave about through the coming year.

The difficulty level of this recipe is easy.

Step 1:

Gather the following ingredients that you'll need to make a delicious oreo chocolate cheesecake.

* 38 Oreo chocolate sandwich cookies, divided (a different brand may be used, if you prefer)
* 5 Tablespoons of butter that has been melted
* 5 Squares of semi-sweet
baking chocolate that has been divided
* 1 8 Ounce package of cream cheese, softented
* 1/2 Cup of sugar
* 1 1/2 Cup of sour cream that has been divided
* 2 Eggs
* 1 Teaspoon of vanilla
2 Tablespoons of sugar

Step 2:

Preheat the oven to 325 degrees Fahrenheit.

If you are using a dark, nonstick 9 inch springform pan, preheat to 300 degrees Fahrenheit instead.

Step 3:

Crush 24 of the Oreo cookies up very finely. Mix the crushed cookies with the melted butter.

Press the mixed butter and crushed cookies into the bottom of the pan. This will be your crust.

The remaining cookies should be stood up around the inside edge of the pan. Be sure to firmly press the bottom edge of each cookie into the crust.

Set the crust with the cookie edging aside.

Step 4:

In a small saucepan, heat and melt for of the chocolate squares on low heat and then set aside.

Step 5:

Beat cream cheese and 1/2 a cup of sugar in a large bowl. Use an electric mixer that is set on the medium speed until the cream cheese and sugar has been well blended.

Add 1/2 a cup of the sour cream and then the eggs and vanilla. Beat again until the added ingredients have been blended well with the sugar and cream cheese.

Add the melted chocolate and mix very well.

Pour this mixture over the crust that had been set aside.

Step 6:

Bake until the top of the cheesecake has just started to puff and the center is nearly set.

Mix the rest of the sour cream (1 Cup) and the 2 tablespoons of sugar together. Spread this over the cheesecake.

Bake for an additional 5 minutes.

To loosen the cake, run a knife or a thin metal spatula around the rim of the pan.

Cool well before you remove the rim.

Step 7:

The rest of the chocolate should be melted in a saucepan and drizzled over the top of the cheesecake. Be creative and attempt a pattern or try to make the cheesecake very gourmet in the way you drizzle the chocolate topping on.

You may also garnish your gourmet cheesecake by adding fresh berries; such as raspberries and chocolate curls and or fresh mint just before serving.

Cheesecake leftovers should always be stored in the refrigerator.

Additional Tips/Suggestions:

To make chocolate curls, allow chocolate squares to become room temperature. Pull a vegetable peeler at an angle across the chocolate square to make beautiful gourmet looking chocolate curls to garnish your cheesecake and many other desserts.
