Colorful Sausage and Sauerkraut

In today's economy, preparing a tasteful and inexpensive meal for yourself and family is essential. Although our children are grown and no longer live at home, I find myself preparing meals that my husband and I can enjoy without spending a lot of money. This meal is fast and easy to prepare. If you like sausage and sauerkraut with some extras, you might give it a try.

Things You Will Need

1. 1 package of Polish Kebalsa or 3-4 sausage dogs, cut into bite size pieces

2.16 oz jar of sauerkraut

3.1/4 of each: green, red, yellow and orange pepper, chopped

4. 1/4 of a sweet onion, chopped

5. 1 tbsp butter


In a large non stick skillet, fry the peppers, onion and then the sausage in the butter until the vegetables are done and the sausage is browned.

Next, using a slotted spoon to drain the juices, add the sauerkraut. Stir together and heat through. I like to use a little pepper when it is done. I fix this meal fairly often, especially during the summer when I can pick peppers from our garden. I think the peppers add flavor and color to the meal.


Tips & Warnings

I have found that using the slotted spoon helps to keep the majority of the extra liquids out. Also, if you plan to make the meal again the next week, just buy the larger jar of kraut and refrigerate it until then, same with the peppers, using a small amount of each, you can enjoy the peppers with scrambled eggs, etc.
