My mother-in-law cooked with the ‘pinch of this and a dash of that’ method, so I could not quite get the sauce right. After many trials and errors, I finally figured out that cream chipped beef was a basic white sauce – with the dried meat added.

Cream chipped beef, served over toasted bread, makes a quick, easy, and inexpensive entrée. Another good thing about this cream chipped beef recipe is that the air-dried meat can be kept in the refrigerator for a while (check the expiration date on the package), so you can always have something on hand for a quick dinner. Or, purchase the brand that comes packaged in a glass jar, which can be stored on your pantry shelf. Cream chipped beef is a tasty way to use up old bread, too.

4 tbsp. butter

4 tbsp. all-purpose flour

2 cups milk (skim or whole milk)

2 pkgs. - 3 oz. size dried-beef

Place the butter in a 10-inch sauté pan, and melt it on a low heat.

Remove the sauté pan from the heat, and stir in the all-purpose flour until well blended; it will look like a paste.

Pour in the milk, a little at a time, stirring well, and make sure to smooth out any lumps. Place the sauté pan back on the low heat, and continue to stir. The white sauce will thicken as your stir.

Break the slices of dried meat into bite size pieces, and add to the white sauce. Bring the cream chipped beef to a simmer.

Serve the cream chipped beef over toasted bread. Add your favorite side dishes, and this easy cream chipped beef dinner is ready in no time.
