The most wonderful thing about these easy crock pot corned beef, chili and chicken recipes is that you put the recipe ingredients together and about eight hours later, dinner is done!

Because time is at a premium and the question "What's for dinner?" never goes away, I have developed three very easy recipes for corned beef, chicken and chili to make dinner time a no-brainer.

Too Easy Crock Pot Corned Beef for Saint Patrick's Day

Corned Beef

Water

Place the corned beef in the crock pot. Fill with water until completely covered. Add seasonings that come with the meat. Cook on low 6-8 hours. Serve with steamed cabbage and Irish soda bread.

Easy Crock Pot Chili

Ingredients

Ground beef or ground turkey

1 can red kidney beans, rinsed and drained

1 packet chili seasoning or chili powder (seasoned to your taste)

1-29 ounce can crushed tomatoes

In a large skillet, brown the meat. Place in a colander, drain, rinse with water, and place in the crock pot. Add the can of crushed tomatoes. Add chili powder or chili packet seasoning and stir. Add the kidney beans, stir again. Cook on low for 6-8 hours.

*If you like it more spicy, add Frank's Red Hot Sauce and some red pepper flakes.

Easy Crock Pot Chicken

Ingredients

4 chicken legs, skin removed

1 can chicken stock

water to cover chicken

1-14.5 ounce can diced petite tomatoes

1 onion, sliced in quarters

Montreal Seasoning

Place chicken legs into the crock pot. Shake Montreal Seasoning on to cover. Pour chicken stock into the crock pot. Add can of diced tomatoes. Pour water into the empty stock can and add to the crock pot until the chicken is covered. Cook on low 6-8 hours. Serve with rice and steamed vegetables.

BONUS: Save the chicken stock water to make a delicious soup for another meal. It freezes well.

By cooking crock pot corned beef, chicken and chili, you will save a lot of time and energy you would otherwise be spending in the kitchen.
