Cupcake Recipes

Cupcakes are probably the easiest dessert to make and eat when having a party. They take up much less space than birthday cakes, they are easy to serve and fun to make and decorate. Sometimes however, it is tough to find a recipe that really speaks to you. A recipe that stands out as unique, yet easy. Well this article will help you! This article contains two easy recipes. One is a jelly filled cupcake and another is a lemonade cupcake. Don’t be intimidated. They are 10 times easier than you think they are!


These jelly filled cupcakes are my favorite. They sound like a lot of work, but with focus, you can get them done! They are very unique and a hit at every party. Have your kids come and help you with these ones! It will all be worth it in the long run!






1 1/4 cups all-purpose flour

1/4-cup quinoa flour (Found at health food stores)

1-cup sugar

1 stick butter (at room temperature)

2 large eggs (at room temperature)

1 1/2 teaspoons baking powder

1/2-cup whole milk (keep it at room temperature)

1-teaspoon pure vanilla extract

1/3 cup strawberry fruit spread or jam (or any other fruit spread/jam)



1 stick butter (at room temperature)

3 3/4 cups powdered sugar

1/4-cup whole milk (at room temperature)

1-teaspoon pure vanilla extract

1/4-cup semisweet chocolate chips (any brand is fine)

2 tablespoons strawberry fruit spread or jam

Strawberries sliced in fourths (otional)




We will start with the cupcakes first, giving us time to make the frosting while they bake. You could make the frosting first, but to save time I recomend starting with the cupcakes.




  1. Start by preheating the oven to 350 degrees. Also take this time to line your cupcake pan with the paper liners. Set this aside.


  1. Next, grab a medium sized bowl and whisk the all-purpose flour, quinoa flour and baking powder. If you desire, add a pinch of salt, which will later bring out the sweetness of the cupcakes. When thoroughly mixed, set aside.



  1. Next, grab an electric mixer and beat together the sugar and softened butter. Slowly add in the eggs, milk and vanilla. Once they are smooth, add in the dry ingredients in batches, to avoid clumping. Mix until completely blended.

  2. Grab your cupcake tray and spoon in the batter to fill only ¼. Then, add 1 teaspoon on the strawberry jam into the center. Finally, cover it up with the remaining batter. It is most important to keep the batter at about ¾ filled. The cupcakes will rise and if they go over the edge, there will be problems.


  1. Finally, you are done with the cupcake part! Put them in the oven for 15 minutes, (give or take depending on your oven)


Now to get started on the frosting!!




  1. Using an electric hand mixer beat the butter. When it is smooth, add in 3 cups of the powder sugar, the milk and vanilla. A tip is to add the sugar in small batches to prevent clumping. Beat until creamy and smooth. Then set this aside.


  1. Begin to melt your chocolate chips at the stove or in the microwave. You can add a bit of milk to get it creamy if you desire.



  1. Now the key is to work fast. Divide your frosting into 2. Add the melted chocolate to one half, and stir the strawberry jam to the other. With the strawberry jam, make sure to add the remaining powdered sugar, to keep it smooth.


Final Details:


  1. Let your cupcakes cool for about 10 minutes on a cooling rack


  1. While they are cooling, you can create your own piping bags. Scoop your 2 different frostings into 2 different zip lock bags. Cut off the corner and begin piping the frosting onto your cupcakes.


  1. Top with sliced strawberries if desired. They can also be strawberries cut into halves rather than fourths.




Next, we will move on to the lemonade cupcakes. These cupcakes are great for the kids especially during the summer. It is easy and a great way to spend time in the kitchen with your kids. They are also very unique and simple.






1 box Betty Crocker SuperMoist yellow cake mix

1 1/4 cups water

1/2 cup powder lemonade drink mix

1 stick of butter, softened

3 eggs



1 (8oz) cream cheese, softened

1 stick of butter, softened

3 cups confectioners’ sugar

1/2 cup powder lemonade drink mix

3 tablespoons milk

2 or 3 drops yellow food color (optional)




Again, we will start with the cupcake, which will allow us to manage our time.



  1. Start by heating your oven to 350°F and line your cupcake pan with paper liners. Once this is done, set the pan aside.

  2. Next, in a medium electric mixer bowl, mix the water with the lemonade mix to make…lemonade! This is a task you can give to your kids.

  3. Once the lemonade is done, add in the butter, eggs, and yellow cake mix. It is a good idea to use an electric mixer, to save time and energy. Another good tip is to add the yellow cake mix in small batches to avoid any clumping.

  4. When you are done, pour the batter into the pan. Again, fill them only ¾ of the way. Bake them in the oven for 20-25 minutes (give or take depending on your oven)

Now to work on the frosting!


  1. Mix the cream cheese and butter together until smooth.

  2. Add in the sugar slowly and in batches to avoid clumps. Slowly add in the milk as well. When these ingredients are fully combined, add in the lemonade mix.

  3. Add yellow food coloring if desired. *

  4. Chill until ready to frost cupcakes

Final Details:

  1. Put frosting into zip lock back and cut off corner.

  2. Pipe onto cupcake. Add lemon zest if desired

*To get striped frosting, add coloring in piping bag rather than the bowl.
