If you are looking for dessert ideas for a family gathering, or are just interested in making a dish for a party, here are a couple of options for strawberry recipes that my family has been making for years. Both strawberry desserts below will serve 6 to 10 people.

I have listed the ingredients for each below, however you can substitute the regular jello with the sugar free version and use Splenda instead of sugar where required.

Each can be made in about an hour, although the pretzel dessert will need to cool in the refrigerator for a couple of hours before cutting.

Recipe for Strawberry Shortcake

This recipe has three components: strawberries, whipped cream and the cake. Preheat the oven to 425 degrees and make sure you have a rack in the upper part of the oven . If not, rearrange them before starting the oven. Place a large bowl and  whisk in the freezer while you prepare the ingredients.

  • 1/3 cup of corn oil
  • ½ cup of water
  • 3 eggs
  • ½ cup of sugar
  • 1 10 oz. can of thawed strawberries
  • 1 tbsp. of cornstarch
  • 2 tbsp. of butter
  • 1 box of strawberry cake mix
  • 8 oz. of cream cheese

Mix the cornstarch and the juice from the thawed strawberries in a small bowl and set aside.

In another bowl, add the cake mix, 2 eggs, water and oil and beat thoroughly with a mixer. Also, I like to make this recipe with vanilla extract for an added twist. If you choose this option, mix it in at the same time with everything else in this step.

Stir in the strawberries and continue to mix. 

In another bowl, mix the last egg, cream cheese, sugar, butter and cornstarch mixture you made earlier together in a mixer.

Next, in a rectangular pan coated with a non-stick spray, pour half of the strawberry cake mix you made earlier. Top everything with the cream cheese mix you set aside earlier.  Now add the strawberry mix again. Place a toothpick in the center of the cake

Bake the cake for about 45 minutes or until the toothpick is forced out of the cake and let it cool.

Whipped Cream and Berries

  • 1 pint of sliced strawberries
  • 1.5 cups of whipped cream
  • 1 tsp. vanilla
  • 2 tbsp. of Domino’s superfine sugar
  • A dash of confectioners’ sugar

Now you can make the whipped cream.  First mix the cream, sugar and vanilla in the chilled bowl you placed in the freezer earlier.  Blend well using a hand mixer on low, then proceed to a higher speed.  Continue until everything is fully mixed.

Split the shortcakes in half horizontally and set the bottoms on serving plates. Evenly divide the reserved strawberries over the cakes, and place a large dollop of whipped cream on top of the bottom half.

Next, arrange the strawberries on top of the whipped cream. Now spread a small dollop of whipped cream to the underside of the top half of the cake. Place a strawberry on top of each half.  Finally sprinkle everything with the confectioners’ sugar and serve.

For the crust:

  • 1.5 cups of crushed pretzels
  • ½ cup of butter
  • ½ cup of sugar

For the filling:

  • One 8 oz. pack of cream cheese
  • ½ cup of sugar
  • One 9 oz. container of Cool Whip

For the topping:

  • One 16 oz. package of fresh or frozen strawberries, sliced
  • 1 large box of strawberry jello

First, preheat the oven to 350 degrees. Place the butter in a small microwavable dish and melt it. Then mix the melted butter with the sugar and the crushed pretzels. After everything is thoroughly mixed, press the mixture into a 9x13 inch pan for baking. Place in the oven for 10 minutes

While that is cooking, you can start to work on the filling. Take the cream cheese half cup of sugar and the Cool Whip and blend everything together. Remove the pan from the oven and let it cool before spreading this filling on the top of the crust.

Lastly, you will need to make the final topping. Dissolve the jello in 2 cups of boiling water, then remove from heat. Add the strawberries and 1 cup of cold water. Next, pour the mixture on top of the filling on the crust in the pan. Place the entire pan in the refrigerator and wait a few hours for it to cool and set.
