Delicious Pancakes from a Mix

Pancakes, those scrumptious fluffy golden brown warm flat cakes; yum, makes me hungry just thinking about them!  I’ve loved the pillowy breakfast cakes for as long as I can remember, and sometimes I’ll have them for lunch or dinner!

As a pancake lover, I’ve had my share of hotcakes at various diners, restaurants and other eateries. I’ve also made pancakes from scratch and from various mixes.  Some of the mixes are pretty good, while others produce a less tasty cake.

I’ve found the best pancakes to be the ones made from scratch but they require more time and effort, so I reserve those for special occasions. On most mornings I use a mix, I get quick and easy pancakes but forgo flavorful cakes for adequate ones.

Last year, I was fortunate enough to find a brand that produced the most delicious pancakes from a mix that I had ever tasted!  I made the discovery after deciding to visit a specialty foods store which had just opened-up in my area.  While strolling through the aisles I noticed a can with a picture of some syrup being poured onto a stack of pancakes.  I picked up the can, read the label and although they were a bit more than the supermarket brands, I decided to give them a try.

Making the pancakes was quite easy, all I had to do was mix 1 medium egg, ¼ cup of whole milk or buttermilk (I prefer the buttermilk), 1 tablespoon of melted butter and 1 cup of the mix. Then I ladled the mix onto a hot (350°F) griddle and flipped when air bubbles begin to pop, turning once and cooking until the cakes were a golden brown color. That’s it! If you prefer waffles; mix 1 medium egg, ½ cup plus 2 tablespoons water, 2 tablespoons melted butter and 1 cup mix and pour into waffle maker and remove when golden brown.  So easy!

The first time I made these pancakes I was surprised, they were light, fluffy, tasty, and so easy to make!  My family could not believe the pancakes they were eating came from a mix.  From that moment on, I was a customer. 

By now you may be wondering what the brand is, well, the mix I found in that specialty foods store last year was the Stonewall Kitchen Farmhouse Pancake & Waffle Mix.  You probably won’t find this mix at your local supermarket, you may have to do a little searching in your area to find a store that carries this brand.  Also, the mix may cost a bit more than your local supermarket brand, but these hotcakes are worth it!  In addition to their Farmhouse Pancake and Waffle Mix, I also found Blueberry Pancake and Waffle Mix and Chocolate Chip Pancake Mix.

The Stonewall Kitchen Company was voted “Outstanding Product Line” at the 2002 NASFT Fancy Foods Show in New York. If you can’t find Stonewall Kitchen pancake mix in your area, you can purchase the mix through Amazon, or go to the company’s website, StonewallKitchen.com, where you will find a large variety of food and gift items.

OK ... I admit it ... when I make pancakes, it is always from a mix. However, I still love the way they taste!

No shame in using a mix, most people do. The Stonewall Kitchen mix is one of the best. Thanks for the comment Deb!

I bet the 'Chocolate Chip Pancake Mix' is to die for...yum! Like you, I love pancakes. I will check at my local Whole Foods, and see if they carry the Stonewall Kitchen brand. Thank you for sharing this, otherwise I never would have known of this brand.
