There are Thai, Indian, Southern India, Burmese and Chinese versions on how to prepare chicken curry. Various condiments, fresh herbs and spices are ground and blended to create extremely hot or mild curry flavors. Chicken curry is a favorite dish world-wide no matter the variation of ingredients. To show you how to prepare chicken curry, we will use a blend of several recipes, a rendition that offers experimental creativity in your own recipe.

Things needed for preparing four servings of spicy chicken curry:

  • 1 whole chicken, cut into 8 to 12 pieces. Wash and dry.
  • 1/3 cup olive oil or ghee
  • 2 tbsp. ground spice (curry) mix: 1/2 tsp. of each: cumin, ginger powder, coriander powder, cardamom, garlic powder, turmeric; ¼ tsp. salt, black pepper, cayenne or chili powder, cinnamon, cloves; 1/8 tsp. nutmeg
  • 2 diced onions
  • 4 minced garlic cloves
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ½ cup yogurt
  • 1 cup coconut milk
  • 1 tbsp. fresh curry leaves
  • 1 tbsp. fresh cilantro leaves
  • 1 tbsp. fresh parsley leaves
  • 1 large Dutch oven
  1. Place the chicken pieces into a Dutch oven. Sauté in oil on medium heat until brown, three minutes on both sides. Take chicken pieces out and set aside.
  2. Add diced onions, minced garlic and spices into Dutch oven. Scrape up the browning from the chicken. Sauté spices on medium-low for three minutes.
  3. Add ½ cup of chicken broth. Place the chicken pieces into the spicy liquid. Let this set on medium low for ten minutes.
  4. Add chicken broth, heavy cream, yogurt and coconut milk, mix well. Turn on low to simmer for five minutes. Option: add flour and water to thicken chicken curry sauce.
  5. Add salt or any ingredients for flavor. Add cut curry leaves, cut parsley and cut cilantro leaves.
  6. Place chicken curry in preheated 350 degree oven for 30-minutes. Take out and check chicken for doneness; thermometer should show at least 165 degrees.
  7. Let prepared chicken curry cool for ten minutes. Serve with egg noodles, or Jasmine rice, steamed vegetables and homemade bread, biscuits or flatbread.

Experiment by adding coarsely chopped vegetables: carrots, potatoes, chickpeas and tomatoes with more chicken broth during step three for a heartier chicken curry meal.
