Dublin Potato Salad

If you like Dublin Potato Saladcorned beef and cabbage, then you will like Dublin Potato Salad. It is an old family recipe passed down from my Great-Grand Mother. Great for pot luck dinners or a quick hearty lunch.

Serve it with Irish Soda Bread

Irish Soda Bread (36523)

Things You'll Need:

2 tablespoons apple cider vinegar
1 teaspoon celery seed
1 teaspoon mustard seed
10 medium potatoes
2 teaspoons sugar
1/2 teaspoon salt
2 cups shredded green cabbage
1-12 ounce can corned beef chilled and cubed
1/4 cup dill pickle, diced
1/4 cup green onion chopped
1 cup mayonnaise
1/4 cup milk
1/2 teaspoon salt

Chill the 12 ounce can of corned beef and then cube. Return to refrigerator. Keep chilled until ready to add later.
Corned Beef
In a small bowl combine the 2 tablespoons vinegar, 1 teaspoon celery seed and 1 teaspoon mustard seed. Set aside.

Cook Potatoes

Wash and pare the 10 potatoes. Cook in a large pot until done. Drain and cube; while still warm drizzle with the vinegar, celery, mustard seed mixture. Then sprinkle the 2 teaspoons sugar and 1/2 teaspoon salt. Chill.

Now, shred the 2 cups cabbage, chop the dill pickle and the green onion.

Shred Cabbage

Remove the potato mixture from the refrigerator and add the cabbage, corned beef, pickle and green onion. Toss lightly.

Combine 1 cup mayonnaise, 1/4 cup milk and 1/2 teaspoon salt. Pour this over the potato mix. Toss lightly. Ready to serve.
Makes 6 to 8 serving.

Tip; can also use leftover brisket from cornbeef dinner
