Easter Jelly Bean Brittle

Jelly Bean Brittle, Candy any Bunny can Make!

This is a fun version of brittle that is perfect for Easter. Jelly beans add the color and flavor. Really quick and easy candy to make.

Ingredients;
4-tablespoons butter, no substitues, divided
2-1/2 cups miniature jelly beans
3-cups sugar
1-cup light corn syrup
1/2-cup water
1/2-teaspoon salt
2-teaspoons baking soda

Step 1...In a microwave safe bowl, melt 1-tablespoon butter. Cube the remaining butter and set aside. Line 2-15-inch x 10-inch pans with foil; brush with the melted butter. Arrange the jelly beans evenly in these buttered pans.

Step 2...In a saucepan, combine sugar, corn syrup and water. Bring to a boil ove medium heat, stirring constantly, until a candy themometer reads 240 degrees (soft ball stage). Stir in cubes of butter and salt and cook until mixture reaches 300 degrees (hard crack stage). Stir in the baking soda (mixture will foam). Quickly pour over the jelly beans and spread with a buttered spatula. Cool, and break into pieces.
Makes 2-1/2 pounds.

Tip; I have used the mini skittles candy and cinnamon candy for this as well.
Don't double the batch.
