Given the fact that I eat it so much chicken, I have come up with a lot of ways to cook it to give it a different taste. I have been known to use some General Tso's chicken the next day to make a chicken and black bean burrito.
One of the easiest ways to prepare this dish is to leave it in a crock pot for several hours, then remove it and either sauté it in coconut oil on medium heat to brown it, or bake it for a short time. I'll cook anything in a crock pot because it has two advantages, especially in the hot summer months. It does not heat up the kitchen and you can leave the house and go do other things while it is cooking.
Some people avoid baking chicken because they feel it can dry it out too much. However, I have found that there are certain ingredients and steps you can take to mitigate this situation. When I bake it, I experiment with all sorts of methods, seasonings and ingredients to come up with a different taste.
Here is a great baked chicken recipe to get you started. The lemon and the honey will allow it to stay moist while it is in the oven.
Baked Chicken with Honey and Lemon
This recipe involves using a whole chicken and will turn out crispy and juicy and yes, low fat. In fact, I have made it several different ways and I will mention both below. First, here is a list of items you will need to get started.
- 1 whole chicken
- 1 kg salt
- 1 cup of honey
- 2 cloves of garlic
- Several potatoes
- Thyme seasoning
- 1 lemon
Preheat your oven to 350 degrees F. Spread salt all over the bottom of a pan large enough for the entire chicken, and then cover it with tin foil.
Wash the meat thoroughly under running water and cut away any fat or skin if you desire. I usually do not like to eat that stuff. After all, it is skin people.
Rub honey on the chicken. That includes the inside too. Then sprinkle the entire chicken with ground pepper.
Next, cut the lemon in half and place both halves inside the chicken. Place the entire chicken on the baking pan and sprinkle with thyme.
Finally, add clean whole potatoes around the pan. Sometimes I use the small red potatoes for this step. Now it is ready to go into the oven.
The chicken needs to cook or for about an hour or until it is golden brown. Around the 50 minute mark, poke the chicken and verify that the juices are clear. Or you can use a meat thermometer making sure the inner portion of the chicken stay about 180 degrees.
Remove from the oven and let cool for about 5 minutes, then serve immediately. The potatoes will have a great taste from sitting in with the chicken and the seasonings and lemon will help the chicken retain most of its moisture.

Baked Chicken with Lemon and Honey
There are other ingredients you can use to get the same basic concept. I have used maple syrup before instead of honey, but if you are trying to keep it somewhat healthy, stick with organic honey.
This baked chicken recipe is great with steamed broccoli. There is no need for any other dish since you can eat the flavored potatoes in with the pan. I have also experimented with other seasonings such as parsley and cilantro. It is always very good and this recipe has received many compliments.
