Make an Easy Breakfast Casserole
Even though this is called an easy breakfast casserole, it is just as good for brunch, lunch, or dinner. This layered casserole is especially good when you have company since it can be made the day before, and just bake it in the morning. Breakfast will be done by the time you set the table and get everything else ready. Or, you can just make it ahead of time for dinner. If you have any leftover easy breakfast casserole, microwave it for another breakfast, or carry it with you to work for lunch.
Easy breakfast casserole is a favorite at my house for Christmas morning. While it is cooking in the oven, we enjoy juice and coffee while we discover what Santa has brought. After eating this easy breakfast casserole, and some homemade biscuits, we are ready to do some serious gift unwrapping.

Gather the ingredients to make an easy breakfast casserole.
1 lb. pork sausage
1/2 medium size onion, chopped
1 small green pepper, chopped
3 slices of bread, cubed
2 cups milk
1/2 tsp. salt
1 tsp dry mustard
1 ¾ cups Mexican style cheddar jack cheese, shredded
Slice the pork sausage in ½ inch slices. Place the sausage in a 10-inch stainless steel fry pan. As you begin to cook the sausage, break it up to resemble scrambled sausage. When the scrambled sausage is about done, add in the chopped onion and green pepper. Continue the scrambling while the onions and peppers cook.
Grease the bottom and sides of a 9 x 13 inch Pyrex dish.
While the sausage is cooking, place three slices of bread on a cutting board, and cut them into cubes. Place the bread cubes in the bottom of the baking dish.
Drain the sausage, onions, and peppers, and place them on top of the bread cubes in the dish.
Sprinkle the shredded cheese over the sausage, onions, and peppers.
Using a mixer or a blender, beat the eggs, milk, salt, and dry mustard for two minutes.
Pour the egg mixture over the cheese layer.
At this point, you may either bake the easy breakfast casserole or cover it with a snap on lid or with plastic wrap. Refrigerate it overnight to be cooked the next morning. When making this to cook the next morning, use a Corningware dish that easily goes from the refrigerator to the oven.
Bake in a preheated 350-degree oven about 45 minutes. Check for doneness.
This easy breakfast casserole will serve four to six people.
