Everyone is in a hurry these days and lunch or snack time is always rushed. It's easy to grab fast food, but definitely not healthy. Eggs are full of healthy protein and very easy to prepare ahead of time so you can quickly whip up this delicious meal on the go. This recipe is a single serving, so double or triple it if you need more.
Things You'll Need:
2 hard boiled eggs
1 tablespoon fat free or regular mayo
salt and pepper
crackers or bread to serve egg salad on
How to put it together:
In a small to-go container, roughly chop eggs or mash with fork for different consistency. I like to do this in a plastic bowl with a lid so that I can take it with me for lunch or a quick snack on the go.
Add mayo and stir in. Add more or less to taste. I like to use fat free mayo. It adds a tangier flavor to the egg salad and spices it up a bit. Plus it has the added bonus of being better for you. You could also use miracle whip if you prefer the flavor of it better.
Add salt and pepper to taste and stir in. The trick is to add enough pepper to taste it. Egg salad can be bland, but it is more satisfying to eat if it is spiced properly. I even know of some people that like to put hot sauce like Tobasco into their egg salad to spice it up. Try that too if you like.
Spread on crackers or bread and enjoy. If any is left over, cover and refrigerate.
