Moist and Delicious Chocolate Cake

Easy to make and oh so good!

After much "tweaking", this chocolate cake recipe is one of my favorite recipes and if you're a baker, you likely have all the ingredients on hand already!

With the cost of gluten free cake mixes being so high, it's nice to have your own version on hand to save some money.  Having to eat gluten free shouldn't mean going without the good things in life....and for my family that's a nice moist piece of chocolate cake. By the one will know this is a gluten free cake! You can serve it to the entire family!


1 cup water, 
1.5 tsp baking soda, 
1 egg

1.5 cups Jenny's Favorite gluten free flour (see below), 
1/2 cup cocoa, 
1 cup sugar, 
1/2 tsp salt, 
1 tsp baking powder (optional - but makes for a lighter cake), 
1.5 tsp guar gum

1 tbsp. white vinegar, 
1/3 cup oil (I use grapeseed or sunflower), 
1/2 cup applesauce (or one snack cup), 
3 tbsp organic vanilla yogurt (optional - but if you can tolerate dairy this makes for a moister cake), 
1 tsp vanilla


In 2 cup measuring cup, add water, baking soda, and egg. Whip. Set aside.

Oil baking pan (10" spring form or 8.5 x 11). Set aside.

Put all dry ingredients in food processor. Mix until blended.

Add ALL of the following to the dry ingredients: vinegar, oil, applesauce, vanilla, yogurt, egg mixture.

Pulse food processor until blended. Try not to over blend if possible but mixture should be smooth and slightly runny. Pour into prepared pan. Bake in preheated oven at 350 degrees until toothpick comes out clean - anywhere from 20-30 minutes depending on pan size and colour.

Ice with your favorite icing or whipped topping. I use NutriWhip topping - as it's gluten and dairy free.

Tips & Tricks: Don't add baking soda to flour directly or you will taste it. Be sure to dissolve in water first. This recipe makes great cupcakes as it holds together well. This cake is very dark when baked and may crack on top when done - but it's very light and moist. Be sure to add ALL of the moist ingredients to the dry before you mix in food processor. You can mix by hand using a whisk - but the food processor is just so easy!

Jenny's Gluten Free Flour Recipe 
1 part potato starch 
2 parts brown or white rice flour 
Mix. Store in airtight container.
