After a long day at work, and an appetite for some great easy to prepare food, look no further than some tasty and healthy Italian.  

Here are three of the best to prepare a delicious three course meal, that’s quick, simple, cheap and healthy.

Bruschetta with Tomato (Appetizer)

Begin with this tasty appetizer.

To serve 4, you need these ingredients:

3-4 medium tomatoes, chopped

salt and ground black pepper

a few basil leaves, torn

8 slices of crusty white bread (e.g. a bread stick, french loaf, but anything crusty will do)

2 cloves of garlic, cut in half once peeled

6 tablespoons of olive oil (extra virgin is best)


1. In a bowl, place the chopped tomatoes and their juice.  Season them with salt and pepper and mix in the torn basil.  Leave to stand for 15 minutes.

2. Toast or grill the bread slices until they are just crisp on both sides and rub one side of each piece of bread with the cut garlic.

3. Arrange the pieces of bread on a platter and sprinkle with olive oil.  Spoon on the chopped tomatoes and serve immediately whilst the bread is still warm.

Spaghetti with Tuna Sauce (Main course)

A simple main dish, but bursting with flavor, you’ll cook it again and again!

To serve 4, you need these ingredients:

8oz/225g of dried spaghetti

1 garlic clove, crushed

14oz/400g of chopped tomatoes or canned tomatoes

15oz/425g of canned tuna fish

½ teaspoon of chilli sauce (optional for heat)

8 black olives, stoned and chopped

salt and ground black pepper


  1. With 1 tablespoon of salt, salt your pan of water to cook your spaghetti.
  2. Once the water in the pan is boiling, add the spaghetti and cook until al dente in accordance with the packet instructions (around 10-12 minutes depending on brand)
  3. Drain the spaghetti when ready and keep hot in another dish, but without letting them dry out
  4. Add the garlic and tomatoes to the pan and bring them to the boil.  Simmer these for about 2-3 minutes without the lid
  5. Add the tuna, olives, chilli sauce and spaghetti to the pan and heat.  Season to taste with the salt and black pepper and serve hot.

Peaches with Amaretti stuffing (dessert)

This classic dish uses the famous Amaretti sweet biscuits paired with ripe peaches (served hot or cold).

To serve 4, you need these ingredients:

4 ripe fresh peaches

juice of ½ lemon

2/3 cup of crushed Amaretti biscuits

2 tablespoons of Marsala, brandy or peach brandy

2 tablespoons of butter at room temperature

½ tablespoon of vanilla extract

2 tablespoons of granulated sugar

1 egg yolk


  1. Preheat the oven to 350F/180C/gas 4.
  2. Wash the peaches.
  3. Cut the peaches in half and remove the stones
  4. Using a small spoon, scoop out some of the peach in the space left by the discarded stones to hold the Amaretti stuffing
  5. Sprinkle the peach halves with lemon juice
  6. Soften the Amaretti crumbs in Marsala or brandy for a few minutes.
  7. Beat the butter until soft and then stir in the Amaretti mixture and the remaining ingredients
  8. Arrange the peach halves in a baking dish in one layer, hollowed sides upwards.  Divide the Amaretti mixture into equal parts for each of the peach halves and fill them, piling the stuffing up in the center of each.
  9. Bake for 35-40 minutes until browned and bubbling.
