Lemon Chiffon Pie is a light airy dessert.

Lemon Chiffon Pie



Prefect for a spring or summer time BBQ or just anytime at all.

Not too tart, not too sweet, just right.

Easy to make ..and the secret to this is...flavored gelatin.

First, this is what you'll need to make this awesome pie:

3 egg yolks, just sightly beaten.

3 egg white, room temperature.

1-1/2 cups water

1/2 cup sugar

Dash of salt

1 package lemon flavored gelatin

3 tablespoons real lemon juice

1-1/2 teaspoons lemon rind, grated

1 baked and cooled pie shell, pastry or crumb crust

Step 1..Combine egg yolks and 1 cup water in a saucepan; add 1/4 cup sugar. Cook and stir over medium heat until mixture is just slightly thickened and comes just to a boil. Remove from heat.

Step 2..Add the flavored gelatin and stir until dissolved. Add 1/2 cup water, the lemon juice, and the lemon rind. Blend well.

Chill this mixture until again just slightly thickened.

Step 3..Beat the egg whites and the dash of salt until foamy. Gradually beat in 1/4 cup sugar and continue to beat until stiff peaks form.

Step 4..Fold in the thickened gelatin; blend well. Chill again, about 1/2 hour. Or until mixture will mound.

Step 5..Spoon into the pie shell and chill again until firm. Should take about 4 hours.

Serves 8.
