In the United States you would be hard pressed to find someone who has not tried Alfredo Sauce. It is available in most Italian restaurants across the country and is usually referred to as ‘Fettuccini Alfredo’. The concept is usually the same- a rich and creamy white pasta dish which is usually offered with a wide variety of additions, such as chicken, shrimp and vegetables. The staple ingredients of this sauce typically include butter, cheese and frequently another form of dairy, such as milk or cream. If this sounds at all like your definition of comfort food, you’re absolutely right, because that is what it was intended to be! In 1914, an Italian chef by the name of Alfredo di Lelio conjured this combination for his pregnant wife, who was suffering from nausea. She enjoyed the dish, and luckily for us, so did two American actors who happened to be vacationing in Italy at the time. They were so enamored with the taste, Alfredo di Lelio graciously gave them the recipe, and the rest is history! Recipes for Alfredo Sauce are now abundant, and the simplicity of the preparation makes it excellent dinner staple. Read on for some creative variations of this beloved flavor.
