Easy to make Salad Dressing Recipes

Salad dressings have been used in greens and salads for more than a thousand years. The Babylonians are said to have made this sauce with vinegar and oil whereas the Egyptians added oriental spices along with vinegar and oil to their greens and salads.

 Salad dressings can be grouped into three kinds:

  •  Vinaigrette – made with olive oil, vinegar, herbs and spices.
  •  Creamy dressings – made with mayonnaise, yoghurt, milk, buttermilk or sour cream.
  •  Cooked dressings – The ingredients are slightly cooked before serving.  

1. Vinaigrette Dressings

French Vinaigrette Dressing

Ingredients:

  •  Salt – ¼ teaspoon
  • Pepper – 1/8 teaspoon
  • Sugar – 1/8 teaspoon
  • Dijon Mustard – ½ teaspoon
  • Red wine vinegar/balsamic vinegar - 1 tablespoon
  • Minced shallot – ½ teaspoon
  • Extra virgin olive oil - 3 tablespoons

 Method:

Take a jar and add the salt, pepper, mustard and sugar into it. Then stir in the vinegar and mix until all ingredients are well blended. Add the minced shallot and olive oil and close the jar with the lid. Shake the jar vigorously until the mixture thickens. Serve immediately.

 

* French Vinaigrette Dressing is best made in a ratio of 3:1 (3 parts oil: 1 part vinegar)

French Dressing

Ingredients:

  • Sugar – 1 cup
  • Red wine vinegar – ½ cup
  • Olive oil – 1 cup
  • Garlic salt – 1 teaspoon
  • Paprika – ½ teaspoon
  • Pepper to taste
  • Minced onion – 2 teaspoons
  • 1 bottle ketchup - (18 oz)

 Method:

Mix all ingredients in a blender. Remove from blender and transfer to a bowl. Serve when ready to use.

Roquefort Vinaigrette Dressing

Ingredients:

  • Roquefort cheese – 3 ounces
  • 2 tablespoons sherry vinegar
  • Sour cream – 2 tablespoon
  • Olive oil – 6 tablespoons
  • Salt to taste

 Method:

Blend the cheese, sour cream, and vinegar in a blender. Transfer the mixture into a clean and empty salad cream bottle. Pour in the olive oil and salt and close with lid. Shake vigorously until the mixture is fully mixed and of a thick consistency.

Mustard Vinaigrette

Ingredients:

  • Freshly chopped tarragon – ¼ teaspoon
  • Sherry vinegar – 1 tablespoons
  • Dijon mustard – 1 tablespoon
  • Sour cream – 2 tablespoons
  • Olive oil – 3 tablespoons
  • Salt to taste

 Method:

Whisk together the vinegar, salt, mustard, tarragon, and sour cream in a bowl. Put the mixture into a clean and empty salad cream bottle. Pour in the olive oil and salt and close with lid. Shake vigorously until the mixture is fully mixed and of a thick consistency.

Lemon Vinaigrette

Ingredients:

  • Lemon juice – 2 ½ teaspoons
  • Grated lemon peel – ½ teaspoon
  • Sherry vinegar – 1 tablespoon
  • Minced garlic – 1 clove
  • Olive oil – 3 tablespoons
  • Salt to taste

 Method:

Whisk together the lemon juice, lemon peel, vinegar, salt, and garlic in a bowl. Put the mixture into a clean and empty salad cream bottle. Pour in the olive oil and salt and close with lid. Shake vigorously until the mixture is fully mixed and of a thick consistency.

2. Creamy dressings

Garlic & Dill Dressing

Ingredients:

  • Milk – 1 cup
  • Fresh chopped parsley – 1 cup
  • Minced garlic – 3 cloves
  • Mayonnaise – 1 cup
  • Dried dill weed – 1 tablespoon
  • Salt and pepper to taste

 Method:

Mix milk, parsley, and garlic in blender. Then transfer the mixture into a bowl. Add the mayonnaise, dill weed, salt, and pepper into the mixture and whisk till smooth and creamy.

Buttermilk Dressing

Ingredients:

  • Mayonnaise - ½ cup
  • Buttermilk – ½ cup
  • Minced garlic – 2 cloves
  • Fresh chopped chives -1 tablespoon
  • Fresh chopped parsley – ¼ cup
  • Fresh chopped dill – 2 tablespoons
  • Salt and pepper to taste

Method:

Whisk together the mayonnaise and buttermilk in a bowl. Stir in the rest of the ingredients and mix till smooth and creamy.

Italian Dressing

Ingredients:

  • Mayonnaise – ½ cup
  • Milk – 1 tablespoon
  • Red wine vinegar – 1 tablespoon
  • Garlic powder – 1 teaspoon
  • Fresh chopped oregano – ½ teaspoon
  • Fresh chopped basil – ½ teaspoon
  • Salt and pepper to taste

Method:

Blend all ingredients in a blender until smooth and creamy.

Pesto Dressing

Ingredients:

  • Fresh chopped basil leaves – ½ cup
  • Mayonnaise – ½ cup
  • Sour cream – ¼ cup
  • Pine nuts – 2 tablespoons
  • Milk – 2 tablespoons
  • White wine vinegar – 2 tablespoons
  • Minced garlic – 2 cloves
  • Salt and pepper to taste

Method:

Blend all ingredients in a blender until smooth and creamy.

Ranch Dressing

Ingredients:

  • Mayonnaise – 1 cup
  • Buttermilk – 1 cup
  • Minced onion – 2 teaspoon
  • Garlic powder – ¼ teaspoon
  • Dried parsley – 1 tablespoon
  •  Chives - 1/2 tablespoon
  • Salt and pepper to taste

Method:

Whisk together the mayonnaise and buttermilk in a bowl. Stir in the rest of the ingredients and mix till creamy.

3. Cooked dressings

Roquefort Dressing

Ingredients:

  • Roquefort cheese – 8 ounces
  • Evaporated milk – 1 (13 ounce) can
  • Mayonnaise – 4 cups
  • Minced garlic – 2 cloves

 Method:

 Heat the Roquefort cheese and milk in a pan over low heat. Stir constantly until cheese melts. Stir in the mayonnaise and garlic. Remove from fire and transfer into a bowl. Cover and refrigerate till ready to use.

Cooked Potato Salad Dressing

Ingredients:

  • Beaten eggs – 2
  • Water – ½ cup
  • Flour – 1 tablespoon
  • Sugar – ¼ cup
  • Vinegar – 6 tablespoons
  • Butter – 2 tablespoons
  • ½ cup mayonnaise

 Method:

Place all ingredients in a saucepan and heat over medium low heat. Bring to boil. Remove from fire and stir in the mayonnaise. Mix till creamy and soft. Pour over potato salad.

Cooked Coleslaw Dressing

Ingredients:

  • White sugar – ¾ cup
  • Celery seed – ¾ teaspoon
  • White Vinegar/Cider Vinegar – ½ cup
  • Salad oil – ½ cup
  • Salt – 1 ½ teaspoon

 Method:

Place all ingredients in a saucepan and heat over medium low heat. Stir until sugar has completely dissolved. Remove from fire and pour the dressing over the prepared cabbage mixture. Allow to cool for 30 minutes at room temperature. Cover and refrigerate until ready to serve.
