Enjoy gluten free cream of mushroom soup
Many comfort foods start with a can of concentrated Cream of Mushroom Soup. These dishes are frequently prepared for potluck dinners and family gatherings. Cream of mushroom soup is used to add moisture to casserole dishes. All of these wonderful warm comfort foods seem to be off the menu when a person or family decides to eat a gluten free diet.

Rice flour and potato flour are used in place of wheat flour in canned concentrated cream of mushroom soup. The texture is not compromised by the change in flour. It is more difficult to find a gluten and lactose free cream of mushroom soup. Many of these also have cream (milk). Some have casein, which is also from milk however, would not include lactose.
Homemade white sauce with mushrooms is wonderful way to create a gluten free cream of mushroom soup that is also lactose free. White sauce is also known as Bechamel. Most white sauce recipes are not complex. White sauce is basically a matter of combining a fat, such as butter with a gluten free flour and bringing them to a bubble over low-medium heat. Stirring constantly with a whisk helps to prevent lumps and scorching. Once the mixture is smooth, liquid is added in small amounts. This liquid might be milk, soymilk, or coconut milk. Stirring until the liquid is incorporated into the smooth mixture. Use low to medium heat to prevent scorching. Chopped mushrooms, onions, or celery can be added. If the sauce is left thick, it is equivalent to condensed soup. The sauce can be thinned to make soup.
Full flavor creamy casseroles are possible with gluten-free condensed soups. There are delicious products that will allow you and your family to enjoy more of your favorite comfort meals. Sever them on cold busy days or at family gatherings. If you take a gluten free dish to a potluck, add a color full index card stating that it is gluten free. A friendship or recipe exchange group might be formed by doing this.
