- Whisk shallot, sour cream, buttermilk, chives, and vinegar in a small bowl
- Add in blue cheese to form dressing
- Season generously with salt and black pepper
- Cut a small head of iceberg lettuce into 4 wedges, place on plates, and spoon dressing over
- Top with bacon, red onions, and more crumbled blue cheese
