Five Great Creative Salads to Make

Marinated olives with feta and cherry tomatoes

This tastes great if you leave it overnight in the fridge to absorb the flavours. Simply add to some rocket leaves and serve

  •  100g olives, pitted
  • 100g feta
  • 100g cherry tomatoes
  • 100ml olive oil
  • 5 sprigs of thyme
  • 5 garlic cloves
  • 5 leaves basil, chopped

 Method

  • Put the olives, feta and cherry tomatoes in a bowl and cover with the olive oil, thyme, whole peeled garlic cloves and leave in the fridge overnight
  • In the morning take the bowl out, leaving the olive oil, thyme and garlic behind
  • Add the basil

Mango and goats cheese salad

I started using fruit with salad basically when I got into cooking. It works really well and the juice makes a nice dressing. Here are a few examples

  • 1 mango
  • 100g goats cheese
  • 50g walnuts, broken up
  • 60g rocket, broken up
  • 2 Tbsp Honey mustard dressing

 

  • Cut the mango into wedges
  • Break up the goats cheese
  • Break up the walnuts
  • Dress the rocket leaves and mix with the other ingredients
  • Squeeze the rest of the mango juice over the salad

 Serves 4

Pesto mayonnaise potato salad

Pesto is a fantastic base for so many sauces. Here is just one example

  •  12 baby potatoes
  • 4Tbsp basil pesto
  • 4Tbsp mayonnaise
  • salt
  • black pepper

 

  • Boil the potatoes
  • When the potatoes are ready drain them and run them in cool water so that they don't carry on cooking
  • Mix the pesto and mayonnaise
  • Coat the potatoes with this mayonnaise dressing
  • Add salt and pepper

 Serves 4

Roasted onion, rocket and orange salad

Usually all you need are 3 things for a salad. I add a sprinkling of nuts and some salad dressing.  Remember less is more

  •  2 red onions, roasted
  • 2 oranges
  • foil
  • 60g rocket
  • 50g cheddar cheese
  • 2 Tbsp almonds

Olive oil dressing

  • 3 Tbsp Olive oil
  • 1 Tbsp Balsamic Vinegar
  • salt, to taste
  • black pepper, to taste

 Mix ingredients together for dressing

  • Set the oven to 200°c
  • Wrap the onions up in tin foil and put them in the oven for 1 hour
  • Segment the oranges
  • When the onions  are done break them up
  • Dress the rocket in olive oil dressing
  • Grate slivers of cheese
  • Arrange the leaves on a plate with the orange and  onions
  • Sprinkle the almonds and the cheese
  • Mix all together
  • Squeeze the rest of the juice over the salad

 Serves 2

Best Thai salad

 This is a really healthy meal, with a stir-fry feel about it.

  •  1 Tuna steak
  • 5 carrots, thinly sliced
  • 100g broccoli, broken up
  • 6 baby corn, sliced
  • 2 apples, cored and sliced thin
  • 50g Cashew nuts, broken up
  • 2 red peppers, sliced
  • 100g bean sprouts, sliced

 Marinade

  • 3Tbsp soya sauce
  • 1Tbsp lemon juice
  • 1 Tbsp honey
  • salt and pepper

Method

  • Take the tuna steak and put in a hot pan for a minute on either side. Don't overdo this. That is the secret! You just want to sear it on either side.
  • Slice your tuna thin into strips and have all your other ingredients cut and ready to toss into the salad.
  • Now you can construct your salad and pour yummy dressy on top. Toss this altogether in a bowl before putting it on plates.
  • Enjoy!
