Design & Operation

Both models take on a 'space saving' vertical design (check specific dimensions of each model below) and operate automatically i.e they are hands-free, all you have to do is insert the bag & the machine carries out the rest. They operate on two speeds (gentle & normal) as well as offering additional settings (e.g. moist/dry foods) to perform a more optimal seal -- and also come with LED progress light indicators to let you know how they are getting on. Surprisngly, there is also a rather useful marinate mode on offer which injects the food with flavor -- which only takes a few minutes.

Practical Features

A range of additional aspects are included also to ensure the FoodSaver operate at the highest standard such as the 'auto liquid detection' to ensure no spilling, 'crushfree' instant seal -- meaning no delicate foods get damaged whilst being sealed up. The V3860 & V3880 also feature an 'extra wide' sealing strip with pulse function to make sure your favorite foods are properly & firmly secured (and not being as limited as lesser models by size of the food). They also come with a canister mode, drip tray (suitable for dishwasher cleaning), roll storage holder & bag cutter as well as a retractable hose (to help with sealing canisters).

So essentially both models offer the same set features, it is just the V3860 comes with extra equipment (and slight design change) and this is reflected in the price between the two (you can compare the prices above). Hence, it is basically a subjective matter as to how often will you want to be storing & keeping food -- if you do it frequently, then go for the V3860 & if it is every now and again, then we'd advise that you go for the V3880. In all, both really are quality machines and you won't be disappointed by either.
