Fresh Fruit and Sea Scallop Salad with Mango Almond Vinaigrette Recipe
This is one of the easiest and fasted salads to prepare. It is especially appealing to serve to friends and family on a hot summers evening or it can be a fantastic addition to your meal. Don't be afraid to add your own favourites to this salad, use this recipe as a base for your own creation.
Ingredients and Preperation:
1. Fill bowl with Greens and add a handful of sugar peas
2. Finely slice your fruit and place them on top of greens:
(The fruit you use is totally up to you. I decided on these frutis since they tasted well together)
3. Prepare toasted Almond Mango Vinaigrette:
- 1 oz mango puree
- 1/4 cup of apple cider vinegar
- 1/4 cup of olive oil
- 1/4 cup toasted Almonds
Mix all ingredients and drizzle over salad.
4. 8 oz of Sea Scallops
Grill for about 15 minutes, and place on top of salad. This could also be made with chicken if preferred.
