Things You Will Need
2 cups of all purpose flour
2 large eggs
that is it! No other ingredients needed
You can do this right on the countertop. Just make sure it is squeaky clean.
Place the flour on the countertop and create a well in the center. Break the eggs into the center of the well.
Beat the eggs with a fork, and gently draw in the flour from the sides. Continue drawing in the flour, stirring the ingredients together until you have a big blob of dough.
Now this next step is good exercise! Knead the dough until it is smooth and silky, rather than rough and floury. The dough will not roll out very well either by machine or manually if it is not kneaded enough. It has to get smooth and silky.
After you have it smooth and silky, then grab a bowl and place it overtop of your dough ball. Leave it there for 15 minutes or so. This is the resting period. This would be a good time to clear up and create any sauces or fillings you want to use with this pasta. If you are going to make ravioli, then you can start cooking this filling now, so that it will be cooled and ready for your pasta. You can let the dough rest for up to 30 minutes before you need to do something with it.
Now if you want to make noodles totally by hand, you now have to roll out this dough ball into a big flat circle and start cutting out your strips for noodles, or whatever shape you like. This is the way they used to do it.
It is much easier to treat yourself to a pasta machine. The manual ones are good, since you don't need to plug it in (you can buy electric ones) you can put it anywhere for this reason, that is convenient. The manual ones tend to be cheaper as well. Some of the older models attach to the edge of your countertop. You can sometimes find these in garage sales, and estate sales. The older models that attached to the edge of the counter were good because they did not take up counter room, but your choice.
Read the instructions on your pasta machine first, you will usually feed it through at least a couple of times, each time changing the setting to create a thinner pasta. Example: You would roll it through on one setting, then fold it in half and put it back through again at another setting. This gradually gets it down to the thickness you need for most pasta.
Making pasta is fun, and a great job for kids. This is another reason I like the manual pasta machine for making this fresh pasta recipe. Kids are not likely to get hurt. You control it manually, which is easier for kids. Most kids love to turn cranks and love too see the dough going in one end and coming out flat the other side. Just like play dough!
Ravioli is a great way to use your fresh pasta recipe.
After you have made your pasta, and put it through the machine as flat as you like, put a sheet of the dough on a lightly floured board. Make up your ravioli filling. This can be as simple as some grated cheese, or a meat recipe, or salmon or whatever you would like as filling. There are many filling recipes out there, but you can get creative and come up with something yourself. Just don't overfill them, unless you plan on making big sized ravioli.
Create enough filling to make 24 little blobs of filling about two inches apart. (This all depends on how wide your pasta machine is, but you can adjust the quantity). Now take a beaten egg and brush in between your blobs (this will be the glue for your squares).
Take another sheet of pasta and place it over top of the first one. Press gently in between the squares so that the pasta touches the first layer. Press gently, make sure they are glued together, then cut your pasta into squares. You can use a sharp knife or a pizza cutter for this job. Now you can boil them as you would any fresh ravioli. If the filling is already cooked, then you really only need to cook the pasta. Which is usually about 6-8 minutes of boiling. Now you can drain them and add your sauce. Great dinner, and totally from scratch
But the difference here, is that you made it completely from scratch, you know what is in the filling, and you only added what you like, nothing else. Using a homemade fresh pasta recipe, is a scrumptious way to serve dinner. It tastes much better than store bought. It is best used the same day you make it. Yes you will be a mess of flour, and especially if your kids helped, but what a dinner you will have!
Homemade pasta went out of style for awhile, when you could buy the dried packages for cheap, but then you started seeing fresh pasta appearing in the "specialty gourmet foods" sections of stores at a much higher price than the .99 cent bags of dried spaghetti.
But it really doesn't take a lot of time to make it, and you don't need a huge list of ingredients either. You know exactly what is in your meal when you make it yourself. All you need is eggs and flour, and you are set to go.
Check out pasta machines online too, there are many to choose from. You just have to decide if you want one with all the bells and whistles or just a simple manual one. This all depends on how often you will use it. But simple is usually the easiest. Decide if your kids are going to use it too. Then choose the model that is right for you.
