G-F African Braised Chicken in WowButter Sauce With Rice and Lime Wedges

On weekends, I like to pull out my slow cooker and prepare a meal that will last for a few days.

After Sunday brunch, I only spend 20 minutes prepping something for the Crock Pot and my Sunday night is free to relax and enjoy.

Since I've discovered WowButter, I've been able to tweak all sorts of recipes that traditionally call for peanut butter.[1]

When I read a recipe called African-Style Braised Chicken in Peanut Sauce (Crock Pot)[2] by Oolala, I knew I could make it gluten-free and peanut-free.

If you aren't on a gluten-free diet, you can use any type of condensed chicken broth or curry powder you prefer (in the same quantities) and yours will turn out just as fabulous.

My Inspiration and Tweaks

According to Food(dot)com author Oolala, the original recipe was derived from Delicious and Dependable Slow Cooker Recipes by Judith Finlayson. She used 1 tsp. cayenne pepper instead of red chili pepper. I used red chili flakes instead of 1/2 a red (or green chili pepper).

Other tweaks of mine included: extra-virgin olive oil instead of vegetable oil, less salt but more gluten-free curry powder, more than double the broth (perhaps the original recipe had a typo) and a tad more tomato sauce. Also, I used Vogue brand gluten-free chicken broth (not shown in my photo).

Vogue Cuisine Vegetarian Chicken Soup & Seasoning Base is also low sodium. Since the original recipe called for condensed chicken broth, I used 2 tbsp. of it mixed with 1 cup of boiling water. (For regular broth, you only need 1 tablespoon per cup of boiling water).

For those of you on a strict gluten-free diet, curry powder sometimes contain gluten.[3] A few gluten-free brands worth a try are: Spice Hunter brand East Indian Hot Curry powder, Spice Islands brand,[4] and Zuuna brand Mild Curry powder.

African Braised Chicken in WowButter Sauce

Serves: 4 - 6 | Prep: 20 mins | Total: 4 - 7 hrs

The balance of ingredients in this recipe was perfect. It had a subtle nutty flavour, not overpowering. I love that I can take it to work on a bed of rice - tastes even better the next day.

Bonus: no flour or corn starch is required (therefore, no lumps to deal with).

G- F African Braised Chicken in WowButter Peanut-Free Sauce

1.5 to 2 lbs. (0.68 to 0.90 kg) chicken pieces   (I used thighs with the skin on)
3/4 tbsp. extra-virgin olive oil
2 small-medium onions, finely chopped
3 - 4 garlic cloves, minced
1/3 tsp. red chili flakes
2 tsp. gluten-free curry powder
2/3 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. black peppercorns, cracked
1 cup condensed gluten-free chicken broth
3/4 cup tomato sauce
1/3 cup WowButter (Creamy or Crunchy)
1.5 tbsp. sherry cooking wine OR lemon juice OR lime juice
1 red bell pepper, finely chopped
Optional: 1 bay leaf 
Optional garnish: lime wedges and/or sprigs of cilantro

On a cutting board for vegetables, finely chop onions and place in a small bowl. In a second small bowl, add minced garlic, red chili flakes, curry powder, oregano, salt and freshly ground (or cracked) peppercorns and set aside. Portion out chicken broth and tomato sauce. Keep these two small bowls near your stove.

TIP: While your vegetable cutting board is out, you could also wash and finely chop red pepper and store it in a small bowl in the fridge (it's added after the slow cooking time is almost complete).

In a large skillet, over med-high, heat oil for a minute then add chicken (leave enough room to turn pieces). Brown chicken on all sides and place directly into your slow cooker liner. While the chicken cooks, put anything that touched raw chicken juices in your sink/dishwasher and wash your hands.

In the same skillet, reduce heat to medium and stir-fry onions until softened (but not brown). Add garlic and spices (from second small bowl) and stir-fry for another minute. Add chicken broth and tomato sauce (and bay leaf) and bring to a boil.
Turn off stove and pour the sauce over the chicken in slow cooker. Cover and cook on low for 6 hours or on high for 3 hours. Chicken juices should run clear when poked. 

Start cooking your rice (I use a rice cooker and it takes about 20 minutes). If you didn't earlier, wash your red bell pepper and chop finely on a cutting board for vegetables.

In a small bowl, combine WowButter (Creamy or Crunchy) with sherry (or lemon/lime juice). Scoop out about 1/2 cup of cooking liquid (from slow cooker) and combine. 
Add red bell pepper and WowButter-wine sauce to slow cooker. Cover and cook on high for 15 - 20 minutes (until pepper is tender). Discard bay leaf (if you used one).
Serve with or on rice and garnish with lime wedges.

This was the smallest quantity I could find on Amazon of Crunchy WowButter at the time of publish. Creamy WowButter and even 1.12 oz Single Portion Packs are also available which are handy for packing lunches or keeping at work.

I recently received a 6-pack of WowButter which has an expiry date of February 26th, 2017 (a shelf life of two years).

Besides this recipe, I find Crunchy WowButter is ideal for making my WowButter Nanaimo Bars and Magic WowButter Pillow Cookies and my soon-to-be published G-F WowButter Carrot Cake (With G-F Low Fat Cream Cheese Icing).
