On weekends, I like to pull out my slow cooker and prepare a meal that will last for a few days.
After Sunday brunch, I only spend 20 minutes prepping something for the Crock Pot and my Sunday night is free to relax and enjoy.
Since I've discovered WowButter, I've been able to tweak all sorts of recipes that traditionally call for peanut butter.
When I read a recipe called African-Style Braised Chicken in Peanut Sauce (Crock Pot) by Oolala, I knew I could make it gluten-free and peanut-free.
If you aren't on a gluten-free diet, you can use any type of condensed chicken broth or curry powder you prefer (in the same quantities) and yours will turn out just as fabulous.

My Inspiration and Tweaks
According to Food(dot)com author Oolala, the original recipe was derived from Delicious and Dependable Slow Cooker Recipes by Judith Finlayson. She used 1 tsp. cayenne pepper instead of red chili pepper. I used red chili flakes instead of 1/2 a red (or green chili pepper).
Other tweaks of mine included: extra-virgin olive oil instead of vegetable oil, less salt but more gluten-free curry powder, more than double the broth (perhaps the original recipe had a typo) and a tad more tomato sauce. Also, I used Vogue brand gluten-free chicken broth (not shown in my photo).
Vogue Cuisine Vegetarian Chicken Soup & Seasoning Base is also low sodium. Since the original recipe called for condensed chicken broth, I used 2 tbsp. of it mixed with 1 cup of boiling water. (For regular broth, you only need 1 tablespoon per cup of boiling water).
For those of you on a strict gluten-free diet, curry powder sometimes contain gluten. A few gluten-free brands worth a try are: Spice Hunter brand East Indian Hot Curry powder, Spice Islands brand, and Zuuna brand Mild Curry powder.
African Braised Chicken in WowButter Sauce
Serves: 4 - 6 | Prep: 20 mins | Total: 4 - 7 hrs
The balance of ingredients in this recipe was perfect. It had a subtle nutty flavour, not overpowering. I love that I can take it to work on a bed of rice - tastes even better the next day.
Bonus: no flour or corn starch is required (therefore, no lumps to deal with).
In a large skillet, over med-high, heat oil for a minute then add chicken (leave enough room to turn pieces). Brown chicken on all sides and place directly into your slow cooker liner. While the chicken cooks, put anything that touched raw chicken juices in your sink/dishwasher and wash your hands.
Credit: RoseWrites on InfoBarrel / All rights reservedIn the same skillet, reduce heat to medium and stir-fry onions until softened (but not brown). Add garlic and spices (from second small bowl) and stir-fry for another minute. Add chicken broth and tomato sauce (and bay leaf) and bring to a boil.
Start cooking your rice (I use a rice cooker and it takes about 20 minutes). If you didn't earlier, wash your red bell pepper and chop finely on a cutting board for vegetables.
