The main advantage to using copper cookware is that it conducts heat better than any other type and distributes that heat evenly. Also, the weight is the best of both, durable enough to last and withstand high temperatures, but still light enough to pick up with one hand. However, the disadvantage is that the pan must be lined with tin or steel because copper reacts with foods.
