Gingered Shrimp for Two Recipe

Gingered Shrimp

Dinner for two can be prepared in as little as 30 minutes if your pantry is stocked
with just a few simple staples. Add some fresh ingredients that you can pick up at your local
supermarket on the way home from work.

Stir fried entrees make great sense for the busy people of the world.
While the rice cooks, you have time to prepared the other ingredients.

Ingredients for Gingered Shrimp for Two;
1-1/3-cups water
1/2-cup converted rice
1 to 2 tablespoons soy sauce
1/4-pound fresh asparagus, cut into 1-inch pieces
1/4-cup diced red bell pepper
1-tablespoon vegetable oil
3/4-pounds large shrimp, peeled and deveined, leave the tails on
2-cloves garlic, minced
2-teaspoons finely grated fresh ginger
1/8-teaspoon dried red pepper flakes
1/3-cup dry white wine

Step 1...
Bring water to boil in a small saucepan. Stir in the rice and soy sauce. Cover and
simmer for 20 minutes. Remove from heat and stir in asparagus and red pepper. Let
stand while preparing the shrimp.

Step 2...
Heat oil in a 10-inch skillet. Add the shrimp, garlic, ginger,and red pepper flakes.
Cook, stirring constantly, for 2 minutes. Add the wine and continue to cook until shrimp are
pink and cooked through.

Serve gingered shrimp for two over beds of hot rice.
Makes 2 servings.
