Christmas time has to be the busiest time of year for everyone. The days fly when spent shopping, sending out those cards and preparing for the big day. Simple easy snacks are the best way to go. Preparing food a few days before hand will make it easier still, with less to do on the day.
This is a quick and simple recipe for everyone to enjoy. Watch you don't break any teeth.
1/2cup Golden syrup
1 cup granulated sugar
1 teaspoon vanilla
1- 1/2 cups raw peanuts
1/8 teaspoon salt
1 teaspoon butter
1 teaspoon baking soda
Line a cooking tray with aluminum foil and grease or spray. Using a medium size bowl combine sugar, golden syrup, peanuts and salt mix well (in a microwave safe bowl) or in saucepan on stove. Heat this for approximately 4 minutes. Stir and heat for another 4 minutes. Now add the vanilla and butter and stir again. Heat for 2 more minutes. If cooking on gas use on lower heat or it could burn.
Now add the baking soda and stir immediately, until the mixture is light and foamy. Do not over stir. Pour onto the prepared baking tray and spread. When cooled, break the brittle into bite sized pieces. You can store this in an airtight container.

Chocolate chip Meringues
The kids will love this one
1/2 cup caster sugar
2 egg whites large
3 tablespoons cocoa
1 teaspoon vanilla
1/2 cup chocolate chips
Preheat your oven to 250degree and line 2 baking trays with aluminum foil sheets.
Place egg whites in large mixing bowl and beat on high speed until they make stiff peaks. Beat in the sugar a little at a time, then add the vanilla. Reduce the speed to low and beat in the cocoa. Use a spatula (plastic or rubber) fold in the chocolate chips.
Drop tablespoonfuls onto baking trays. Leave space between to allow them to spread. Bake for an hour. Turn the oven off and leave meringues in oven for another 2 hours. Do not open oven door during this time. Remove from tray and store in air tight container.
Simple Easy One mix Quiche
This is simple to make no pastry shell required.
1-1/2 cups milk
Salt n pepper
1 cup grated cheese
1 chopped onion
3 bacon rashes
1/2 cup SR Flour
Mix grated cheese, onion, bacon and flour together. Add the milk and egg mixture. Mix thoroughly. Pour into a greased dish an d cook in a moderate oven 200degrees for 45-60 minutes.
So quick and easy to make and doesn't taste too bad either. You could make a double batch and freeze for that special day.
