Chile Grilled Cheese Sandwich

  • 4 poblano peppers
  • 1 14-ounce can pinto beans, preferably low-sodium
  • 3 tablespoons prepared salsa
  • 1/8 teaspoon salt
  • 1/2 cup shredded Monterey Jack or Cheddar cheese
  • 2 tablespoons low-fat plain yogurt
  • 3 scallions, sliced
  • 2 tablespoons chopped fresh cilantro
  • 8 slices sourdough bread


Place peppers in bowl and heat in microwave for 3-4 minutes.

Next combine the beans, salsa, and salt in a medium size bowl then mash the beans until you have formed a paste. Combine cheese, scallions, yogurt, and the cillantro into another small bowl.

After the peepers have cooled slice them in half long ways and remove the seeds.

Spread 1/3 cup of bean mixture onto 4 slices of bread. Top with large spoonful of cheese mixture and place to halves of pepper over the cheese. Cover with remaining bread.

Heat 1 teaspoon of canola oil in medium size sauce pan. Place the sandwiches in the pan and heat until golden brown which takes about 2-3 minutes. Use another pan with soup cans to weigh down the sandwiches if needed. After you have flipped the sandwiches reduce the heat to med low and repeat process.

White Pizza With Mozzarella

  • 1 fresh pizza dough or store bought
  • extra virgin olive oil
  • 2 cups part skim ricotta
  • 2 garlic cloves chopped fine
  • flat leaf parsley a handful is enough chopped fine
  • 2 cups shredded mozzarella
  • 1/2 cup shredded basil leaves


Preheat oven to 425

Stretch or roll out dough to pizza pie size

Poke small holes with fork in dough and drizzle olive oil

Mix ricotta cheese with garlic and spread evenly on dough

Sprinkle a light amount of salt and pepper

Top pizza with shredded mozzarella cheese and bake until crispy
