Ceremonial Bread Recipe (Artoklasia Artos)


  • 12 eggs, beaten
  • 10 pounds of flour
  • 1 1/2 pounds butter melted
  • 2 1/2 cups sugar
  • 4 cakes yeast
  • grated rind of 2 oranges
  • 1/4 cup Cognac
  • 1 teaspoon anise seed (rolled flat)
  • 1 1/2 quarts warm milk
  • 1 cup warm water
  • 1 teaspoon salt

Place flour in large bowl. Dissolve yeast in 1/4 cup warm water, add to flour. Add eggs, butter and sugar and slowly add warm milk mixed with water.  (May take more milk) Mix well. Add rind, Cognac, anise seed and salt.

Knead until dough is soft and smooth. Cover and put into 5 greased 9" round pans. Cover, let rise until doubled in size. (if all bread cannot be baked at the sae time, cover only those that will be baked first so as to slow down the rising process.)

Bake at 375 degrees for 15 minutes, then lower temperature to 350 degrees and continue baking for 45 minutes longer. Remove from oven and brush with a mixture of 1/2 cup honey which has been diluted with 2 teaspoons of warm water. Sprinkle with powdered sugar.


New Year's Brad Recipe (Vasilopita)



  • 4 cakes compressed yeast (or 4 pkgs. dry)
  • 1/2 cup luke warm water
  • 2 1/2 pounds flour
  • 1 teaspoon salt
  • 1 1/2 cups milk, scaled and cooled
  • 1/2 pound melted butter
  • grated rind from 1 lemon and 1 orange
  • 1 ounce whiskey
  • dash nutmeg, cloves & cinnamon
  • 1/2 cup liquid strained from boiled whole allspice (about 6 berries)
  • 6 eggs
  • 2 cups sugar

Dissolve yeast in water. Sift flour and place in a  large bowl. Make a well int he center and gradually add the salt, milk, butter and flavorings. In a separate bowl beat eggs slightly and add sugar. Mix until dissolved and add a little at a time it  flour well., stir to blend ingredients.

Add yeast mixture and mix well. Turn onto a floured boars and knead thoroughly, at least 10 minutes, adding more flour if necessary to keep from sticking. Brush surface with melted butter, cover and allow to rise in a warm place until double in bulk. Repeat this procedure a third time. Punch down dough and shape into two large round loaves about 12" each.

Place into greased pans and let rise until double. Brush with egg yolk slightly beaten with 1 tablespoon water. sprinkle with sesame seed and bake at 375 for 15 minutes. Reduce heat to 325 and bake an additional 20 minutes or until golden brown.
