You can do this as a main dish or cut it up into small bite size pieces for appetizers!
Things You Will Need
Here is what you need:
pizza dough (you can get the pre-made dough from the grocery store, that you have to roll out, or you can use pizza pie shells or even flat breads, your choice) for this grilled lobster pizza recipe, the quantities are for a personal sized pizza. So you can adjust the amounts if you want a bigger grilled lobster pizza, but it is best not to overload this, you don't want to be losing anything to the floor! You may want to use a knife and fork!.
3 ounces of lobster meat, chopped into 1/2" pieces.
1 tomato (sliced thinly)
1/8 cup of olive oil
basil and some chopped garlic to taste
2 -3 tablespoons of parmesan cheese
1/2 cup of your favorite goat cheese
Here is what you do:
Roll out your pizza dough or get out your pizza pie shell or flat bread.
Take a bowl and mix the lobster meat with the olive oil, and garlic
Get your barbeque ready, by really cleaning the grill, and grill both sides of your pizza dough for a minute or so each side (or to your liking). Take off the barbeque
Take your thinly sliced tomatoes and lay them out on your pizza
Spread out your lobster mixtures
Top with goat cheese and basil and parmesan cheese
Now place back on the grill, and turn down the heat and close the lid. Let cook for 5 minutes at a time, and keep checking it, until it is done to your liking. This will all depend on your barbeque.
You can sprinkle this with lemon juice for added flavor.
You can also change a few of these ingredients to get a different flavor each time. Goat cheese makes this lobster pizza tastes extra special but you can go for a shredded cheese blend.

When grilling a pizza you need to use the roll out dough and roll it out to 1/4 inch thick, you don't want super thin pizza for the grill or it will fall through.
The next thing you have to do, is make sure your grill is super clean and slightly oiled. Now take your rolled pizza dough (with no toppings on it, just the dough) and place it on the grill for a minute or two, until you get the grill marks, then turn it over and get the same on the other side.
Then take it off the grill and place all your ingredients for your grilled lobster pizza on the pizza dough, or whatever flavor you are going for, and then return it to the grill and turn the heat down and close the lid.
By closing the lid, you will create an oven like atmosphere and the toppings on top will cook and melt. Don't walk away from this grilled lobster pizza, you need to keep an eye on it, as it will not take long to cook and you don't want to burn it. This goes for any pizza, that cheese melts fast.
Slide your pizza onto plate or cutting board, and slice it for your main dish with a salad, or slice into smaller pieces for appetizers.
You can grill any flavor pizza on the barbeque. It will cook very quickly, so be careful, but it has such a nice flavor, you will have hard time going back to the oven way!
